Roast potato madness

Tonight's dinner was a first....

DH was cooking a roast, and put the potatoes in the oven, whole, WITH SKINS ON and without going through a par boil phase.

Needless to say it resulted in mini jacket potatoes not roasties!

I'm not really sure what I witnessed 😂

Is this strategic incompetence? I suppose fried baked potatoes would have been OK. Has he never eaten them before or something?!

I quite often make mini jackets using new potatoes as part of a mid week roast.
I have also been known to make roasts with the skin on (still parboil though and with loads of garlic and rosemary or thyme) just depends what I fancy

I did little unpeeled roasties to go with casserole tonight.

Chop them into small chunks, par boil, fluff up & dust with flour & seasoning.
The skins lift off a bit & get super crispy.

I'm also a fan of the mini jacket/roasted new potatoes.

Yyyyuuuummm.

I do the same thing, life is too short to par boil and peel, just chop and chuck em in the roasting pan with the meat

He didn’t chop, he didn’t peel and op doesn’t say they were baby potatoes.
I roast baby potatoes whole without parboiling. I usually chop up potatoes in skins and roast in olive oil but for proper roast potatoes you need to peel if not parboil.

You think that is bad, we went to the farm shop to get beef for a roast, (their beef is not cheap, so it was a considered decision) I was busy talking to the head butcher and left DH to it.

He allowed the other butcher to sell him topside, it was as tough as old boots and in the absence of our dear departed dog, it went in the food bin, it was too tough to even put through a stirfry tomorrow.

I was not best pleased. <<understatement>>🙄

No chopping, no peeling, no par boil, no seasoning. Just straight out of the packet into the tray with a bit of oil!

It's not his usual method of roasting potatoes.

We used to love going to Sunday lunch at a restaurant that is now closed but every time used to comment to each other that the potatoes were dreadful - baby potatoes cut in half with skin on and roast , just nope always got left.

I have chosen topside for years if I’m roasting beef. It’s always beautifully tender. I just roast it normally but I suppose it depends how you cook it.

Never peel potatoes, the skin adds fibre and gets crispy and yum.
