I'm very very bored or making and eating the same dinners every night.... chilli, fajitas, steak and chips, stir fry, blah blah blah

Do you make anything really unusual or different? Inspire me please!

My lazy dinner is frozen cauliflower cheese with peas and a frozen salmon fillet baked together until bubbling.

Cheese & leek bread & butter pudding is easy & very tasty. I use this recipe but with extra leeks & minus the stilton (ie with just the 200g cheddar) as otherwise it's a bit too overwhelmingly cheesy. (Also obviously cheaper with just the cheddar!)

Gilgori toast was a great one in our repetoire : essentially a egg and cabbage toastie.

chinese tomato eggs, I replace eggs with tofu now, and used to add baked beans too . Eat with rice.

I love Japanese food and things like donburi, bimimbap etc are so easy and delicious. I cook white sticky rice (just buy sushi rice but be sure to follow the cooking instructions on the packet!). I make some sort of marinaded meat or tofu (teriyaki chicken for example) and cook some tenderstem broccoli, carrot, babycorn (or whatever veg you like) in a wok with another little marinade (soy is fine but a mixture of rice wine, garlic and soy is better). Make up a bowl with a base of the rice then add the meat and veg and some edamame (and pickled veg if you like them). Really tasty and healthy. You can add a fried egg on top too.

Bacon tarts; Put some muffin cases into a metal muffin tray, line them with smoked bacon. Add a slice of tomato or a spoonful of ragu sauce, some chopped spring greens, some fried mushrooms, and pour over beaten eggs with a splash of milk and seasoning. Cover with grated cheese and bake in a medium oven til done.

Stuffed peppers; cut the top off some red peppers and stuff with savoury mince and tomato filling, cover with grated cheese and bake til done.

If you like Japanese food then tempura is really easy - slices of meat, fish, tofu and vegetables in a light batter, deep fry til golden. Serve with rice, pickled ginger, wasabi and a soy dipping sauce.
