Scotch broth? Or other hearty but simple (inexpensive) soup?

Do you have an easy recipe that turns out delicious and can keep in the fridge for a few days?
I fancy making some up for lunches but not sure how long it would keep in the fridge?
Other filling and easy recipes welcome!

1 run chopped tomatoes
1 tin mixed beans
left over cooked brown rice
water or stock to thin it to preference
salt and pepper
Smoked paprika

(alternative seasoning|ingredients)
italian herbs
sauted onion and garlic
sauted bell peppers

I love a 'ham water soup'. You boil the ham with cloves, onions and bay leaves. You can eat the ham as one meal with new potatoes/ mash, veg, chutney and just save a slice for the soup. Keep the water and add celery, grated mushrooms, carrot, chopped peppers, lentils, cajun seasoning, black pepper balls if you have. Boil up for an hour or so and mash with potato masher. You can put potatoes, noodles or rice at this point, whatever you like and it's a meal.

You can add whichever veg you like really but for those who like a recipe see below.

Ham water 2/3 saucepan
1 stick celery approx
1 red pepper
10 grated mushrooms
2 carrots
1/2 cup red lentils
10 black pepper balls
Cajun seasoning

Rice, potatoes or noodles

These ideas are all great. Can't wait to try some.

It's also v easy to make a Thai green curry soup. Just add ingredients you like (I use leftover chicken carcass boiled up and meat removed), spinach, rice, green beans, tin of coconut milk and dessert spoon of green dragon Thai green curry paste, fresh coriander added at the end if you have it.

I do my Scotch Broth in the pressure cooker.

roughly like this:

Dice swede (we call it turnip in Scotland) and carrots. About same amount of each, 0.5 cm dice for carrot, 1cm dice for turnip.

Cut a leek in half lengthwise and slice, not too thinly.
Throw in pot with enough beef stock to cover. Add a handful of barley and a few cubes of diced beef.
Season with salt and pepper.
high pressure for 20 minutes.

adjust seasoning when it comes out. Fish out the beef, should be very soft, shred and mix back in.

For best results leave for a day to mature.

Tips- never use onion instead of leek and don’t put in too much barley.

@SilentHedges just got to say I made the soup you posted, it was spot on! Just a good tasty veggie filling soup. I actually got a pack of chopped soup veg for 50p, then just threw in some chopped celery, mushrooms and the barley along with the stock and some herbs. Cheap, easy and tasty.
Now to look at some of the others here!

I love a chunky veg soup.

My top tip for minestrone (or any random veg soup) is to add a chunk of Parmesan rind. I think I read this in Nigel Slater years ago and it works a treat, adds a lovely rich flavour. I keep my Parmesan rinds in a freezer bag and chuck one in when it's simmering. Just fish it out at the end with the bay leaves.

Also for Scotch broth if you are not veggie use lamb stock (I get those Knorr stock pots) instead of vegetable, even if the rest of the soup is just veg, barley and beans.

It's a great soup/broth isn't it, and I must admit I only discovered the benefits of Pearl Barley recently, such a good filler. Glad to help and pleased it was a hit!

Has anyone got a good recipe for sprout soup please? I tried to make it recently and it had a horrible taste to it and I don’t know why? Any advice welcome.
