Hi op......i use tinned water chestnuts and bean sprouts. Half a tin of each does myself and teenage son. Bean sprouts and frozen mixed peppers. Protein wise sometimes chicken or frozen qourn pieces. A sachet of sauce and some ready to wok noodles and voila dinner is done 💕

I buy edamame beans stir fry from Aldi and add some extra mushrooms and broccoli to it and 2-3 eggs. We also did it a few times with halloumi.
Both DH and I liked it.

Brilliant thank you. All added to shopping list.

Chilli, garlic, ginger, spring onions, coriander

Any meat/prawns

For veg I like to use sugar snap peas, baby corn, sliced peppers, mushrooms

I often add a handful of cashew nuts too

I also add sesame oil, soy sauce, oyster sauce, brown sugar

Whatever I have lying around

pinkmarble · 08/02/2024 16:37

I buy the £3 (or so) deal from Asda which includes the vegetable, the noodles, and the sauce - then I buy a pack of chicken which will last a couple of meals.

TiaSeeya · 08/02/2024 16:48

I make my own sauce - soy, sesame oil, cornflour, sherry, honey.

Add in sugar snaps, peppers, spring onion, garlic, ginger, pak choi or cabbage/spring greens, tenderstem broccoli

Add protein eg leftover meat or flaked roasted salmon

Onions, garlic, cabbage, carrots, broccoli, bean sprouts, mushrooms, Chinese five spice and soy sauce. Cheap and yummy! 😋

I like the straight to wok noodles, they are so easy.

I have always struggled to make nice noodles but this recipe is absolutely brilliant. You could add chicken, peppers, prawns tofu etc but as a base it is the best noodle recipe I've found.

Plain Chow Mein - Khin's Kitchen

Easy takeaway style plain chow mein with bean sprouts, spring onions, and delicious soy sauce based sauce. Ready in 15 mins!

What sort of stir fry are you after?

For Pad Thai poor boiling water over flat wide rice noodles and leave. Stir fry some chilli, garlic, spring onions, cooked meat / tofu. Push to side and make a loose omelette and stir through, add drained noodles, bean sprouts and sauce made from tamarind paste, honey, fish sauce, stir through sprinkle with peanuts.

egg noodle type things:

poor boiling water over dried egg noodles and leave.

flash fry whatever protein you’re using.

stir fry fresh ginger, chilli, garlic, green veg (great for using up cabbage etc) peas sweetcorn etc. make sauce from soy sauce, fish sauce, lime, etc stir through fresh herbs. Toast some cashews dry in a pan.

Fried rice: cook rice and let go cold, stir fry whatever you’re using, add cold rice, cook through, add soy sauce push to side make loose omelette and stir though, top with herbs, sliced spring onions and sliced fresh chillis

we make endless variations of the above. If you have soy sauce, fish sauce, rice wine, limes, fresh ginger, chilli and garlic you can really add whatever you have knocking around.

I always use dried noodles imo they are nicer than the ready to wok ones which are rather oily (and also cheaper). Put in bowl and cover in boiling water and they’ll be ready by the time you’ve cooked everything else.

we also make this sticky chicken and rice dish which is fab. Coat chicken pieces in corn flour and shallow fry. Remove from pan mix together some cornflour, water, rice wine, soy, honey add garlic and chilli flakes to oil then add sauce and stir continuously and it changes into this fab sticky sauce in seconds - add chicken and stir through.

Annas Family Kitchen insta has some great easy recipes.

On a side note I made a Mob recipe the other day which was chicken in a honey mustard sauce with stir fried cabbage, lentils and herbs which was super easy and very tasty!

I’ve just done carrot, courgette, pepper (all cut into thin strips), bean sprouts, prawns and noodles with a sweet chilli and garlic sauce. It was a winner with everyone, including fussy eater DD.

ThreeRingCircus · 08/02/2024 17:12

I make my own sauce by frying garlic and ginger, then adding chilli, honey, soy sauce and a big spoonful of crunchy peanut butter.

For veg I tend to do onions, peppers, water chestnuts and pak choi then some egg noodles.

Toss altogether when everything is cooked. You can add coriander/cashew nuts/chicken/fried egg on top depending on what you have in.

If you like black bean, get some Yang Jieng black beans with ginger off Amazon to make your own black bean sauce. One box will last you until the end of time and you can make sauce really similar to the Chinese takeaway. I love making beef in black bean sauce using sirloin steak, peppers onions and carrots. Serve with lucky boat noodles.
