How sick are we going to be? Eaten undercooked kidney beans

So, the whole family has eaten undercooked kidney beans. It was only at the end of the meal that the niggling at the back of my brain became a clear memory of reading that uncooked kidney beans are toxic. We've had about a can's worth between three of us. What should we expect?

Is this not for dried beans rathe than canned beans which have already been cooked? Or were you just using the can to gauge quantity and they were dried beans?

Tinned are already cooked, it's the dried ones you have to watch (my gran hospitalised my grandad with undercooked dried kidney beans)

Canned ones can be eaten cold so you should be fine, obviously when reheating food it should be heated till very hot but it’s not like you were warming up prawns or pork. I’d put it out of my mind and hope for the best.

Canned aren't toxic, but toxic or not you will fart like colic-y elephant. I hate kidney beans.

The lectin (toxin) is cooked out of the beans before canning.

They were ones I'd soaked overnight from a packet. I just used can as a guide to amount.

They were put in a chili towards the end because I forgot that they were not canned. They were definitely woody and a bit like eating peanuts.

Canned is fine! They’re boiled in the can which is what makes them last forever.

It’s only if you eat tons and tons of actually raw, dried ones that you would be unwell.

That’s also fine - they need to be soaked for a min of 5 hours and boiled for at least 10 minutes which I’m sure you did.

Oh that is a relief, thank you. They were cooked for about twenty minutes on a slow simmer.

Did you not cook them much at all then?
Symptoms seem to include vomiting and diarrhoea

You should be ok. Vomiting and diarrhoea may occur two to three hours after consumption. The toxicity of raw red kidney beans is related to their levels of haemagglutinin. However, when the beans are soaked for 18 hours, between 22 to 66 per cent of the toxin is removed and its completely destroyed by boiling for 10 minutes.

"The beans must boil for ten minutes to destroy the toxin. After this, simmer until cooked (approximately 45 to 60 minutes), when they should have an even, creamy texture throughout. If the centre is still hard and white after this time, they require more cooking."
OP when did you eat these undercooked kidny beans?

Toxic is a strong word, difficult to digest is more like it. May have a dodgy tummy but you’ll be fine :)

If it's going to affect you, it's usually 1-3 hours after eating and symptoms last up to 3-4 hours. Nausea, sickness diarrhoea, abdominal pain. Fingers crossed they were boiled enough.... xxx

They weren't canned beans. OP only mentioned a can as she was using it as a measurement guide. The beans were dried and she had soaked them but not cooked them in advance before using
