Would you look for another or stay put

My job is in a very nice company, with a very decent salary too. BUT there's no growth and the role is fairly unfulfilling.

I'm also turning 40 this year so I feel like I'm getting old and I'm starting to think I won't achieve what I want career wise.

You should absolutely look. You don't have to apply for anything but at least you will know what's out there. And maybe something exciting will come along.

At 40 your best career years are still ahead of you!

I think my biggest hesitation is that most roles are hybrid and I need a fully remote job.

I couple of months ago I got really far with a company I really liked they wouldn't take me even when I promised I would stay over night to have the two office days.

It may take you longer to find something that works, either by negotiating fully remote or finding a role that is advertised fully remote, but if you don't look you will never know.

Yes it will probably be a more frustrating job search than if you were able to do a hybrid role but at least you will know you have seen what is out there.

And if you don't end up moving you will know it wasn't a possibility, and you didn't miss out on any opportunities.

You could define your minimum/maximum level of job search effort, ie I will check in with recruiters every 6 months and set up specific job alerts on LinkedIn (or whatever is relevant to your industry) so that you have good exposure to opportunities but don't spent too much time on it.

You're in a great position - you have a decent, well-paid job and so you can take your time being picky about your next move.

Yes, look, accepting it might take a while as you want certain things.

Yes, I've started looking. I even got a first screening with s recruiter yesterday morning. This job would be a 42% pay cut and she even questioned why would I do it. Which I know sounds bizarre to anyone interviewing me.

I wouldn't take that pay cut regardless, but I think it's a good way to get my interviewing skills in top form.
