I found this today and it sounds like what you are looking for. Uses coconut milk and curry powder...

Op, simplest (veg) curry:

  1. Fry onions and garlic
  2. Add spices (e.g. turmeric, garam masala and coriander powder or just a bit of salt and pepper as I do for my kids)
  3. Add chopped tomatoes
  4. Add vegetables
  5. Add coconut cream (this is optional but you sound like you are very invested already in your can of coconut cream so you might as well add it...)
  6. Cook till the vegetables are done

That's it. Enjoy.

What do you usually order? I imagine Thai as you are using coconut milk - red, green, Penang? If you let us know your usual order it would be easier to advise!

Not if you want it to be edible.

I sometimes do a really basic chicken tikka masala
grill chicken (if you want to do prep earlier marinade it in yogurt, garlic, ginger and garam masala for a couple of hours)
Fry onion in butter, add chopped ginger and garlic, add tin of tomatoes, salt, pepper, teaspoon of sugar, tablespoon garam masala, cumin, tumeric, curry powder, a bit of cream, chicken stock cube and top up with boiling water. Add the chicken and simmer for 20 minutes. Add more seasoning if needed.
its pretty easy and goes down well in my house

Put some oil on a pan, heat it up, add some chopped up chicken breasts, then bung in a jar of curry sauce. Let it simmer and heat up, then serve with rice.

It's the easiest and cheapest way.

You could also fry some onions or other veggies with the chicken if you fancied it.

My favourite easy one is:

Fry onions and (cooked) new potatoes and add a curry paste/sachet and then add quorn chunks, a tin of chickpeas (drained) and 1/2 pint of oxo cube made into stock.
Simmer for a couple hours. I add random veg if we have any.
It's super basic and tastes like curry pot noodle so the kids love it 😂

^^ forgot, I add a sachet of creamed cocolnut toward the end

We have started making our own Indian curries using this paste/gravy. It's all the spices/tomatoes etc boiled & simmered which we split into freezer bags & freeze then it takes about 10 mins to make a tikka/balti/jalfrezi etc after adding it in. We've made a few different ones & they're lovely. Just use Google for a recipe for whatever curry you like. Also made homemade naans using Greek yoghurt, yeast & flour 😋

Sauté onions, add meat or veg and brown, add curry powder to the onions etc then add the coconut milk

just came here to say.... curry powder has no place in curry (Indian or Thai). it was a British invention.

if you don't want too much faff I recommend a Japanese curry roux block (available in most supermarkets). you can use the recipe for chicken curry on. it's super easy

www.justonecookbook.com

no coconut milk needed

oh and never use breast meat . it dries out and tastes awful

if you want Indian curry. that requires a fair amount of work. curry pastes from supermarket are basically an insult to our cusine.

if you want thai, try the pastes available on www.mythaicurry.com. they are freshly made and excellent. although you have to ensure you have proper coconut milk(they recommend brands and advice what to look for on their website)

ultimately coming curries is a labour of love. the more you work on it, the better it will be
