'Old school' dinners

My son is 4 and has ASD. I'm trying to get him to eat better meals (he was brilliant as a baby!). He ate mince in gravy with mash potato and veg today. I couldn't be more proud. What other easy 'old school' dinners could I make that fit the bill for children? Bonus points for a recipe of sorts/point in the right direction.

Mac and cheese recipe
Boil pasta in milk ( no water)
Once cooked add grated cheese.
Stir.
Done!

One of my all time childhood favourites was rissoles. It was a way of using up left over Sunday roast. You finely mince lamb or beef add extra flavours such as herbs, onion ( can be finely minced with the meat) Bind together with an egg. Roll into balls or small burger shapes. Cook in a small amount of oil and then add gravy, can be left over from roast or freshly made.
You can add breadcrumbs but it’s not necessary.
Served with mashed potatoes they are delicious.

My gran used to make a very comforting dish of chicken (breast cut up) in a white sauce with bits of veggies in like peas, red peppers, broccoli, served over rice or with mash. She would ring the changes with the white sauce by making it cheesy or adding some herbs. I loved it as a kid. I wonder if something like that would work for your son. I think the sauce was just a bechamel type sauce.
