What equipment do you have for making salads easily?

I love salads but the chopping and prepping is often wearisome as I have arthritic hands. I would like some sort of equipment that is easy to use that will give me sliced and diced veg. I want to make lovely poke bowl type salads. I think I need something electronic rather than hand held. Any good suggestions?

Oh is there anything I out there to cut veg into cubes? I have a ninja food processor but I don't think it does cubes.

Look at my Alligator post above - it cuts cubes into 2 sizes.

I bought a mandolin and actually sliced the side of my thumb off and had to go to A &E (many years ago) so bought a Stainless Steel Alligator chopper and it is brilliant and have had it few years. Was amazed just now to find that it is now £93 on Amazon - think I paid about 50 for it but I use it almost daily but don't think I would pay that much for it but if you would it is brilliant. does the alligator do thin julienne style slices of carrot, peppers etc etc? I can see it does dicing, slicing and chopping veg sticks, I'd love the really thin julienne carrots and the like though - can't see if it does these or not

I have a mezzaluna. I just use a big chopping board but I’d love to get a curved board like this one
