The time has come for me to actually have to buy food again as "just eat what's in the fridge" will no longer wash.

Any suggestions for healthy and filling recipes would be gratefully recieved as I'm just staring at my shopping app with zero inspiration!

Parboil chunks of pumpkin.

Make an Italian tomato sauce. Include bits of bacon or Greek feta for a salt hit.

Slice the pumpkin and layer like lasagne with the sauce.

Cheese and breadcrumbs on too and into the oven until brown and bubbling.

Very tasty, very filling, very forgiving.

Cheese and breadcrumbs on top.

Looks like nobody has any healthy and filling recipes!
Anything with lots of veg and some lean meat is a go to for me. So lots of stews and soups. I try not to put cheese on stuff as it's all extra calories and fat.
I'm using up the Christmas stuff, so not everything is going to be 'healthy' in the next week or so, but I'm definitely not buying anything that isn't healthy.
Planning on cooking a small turkey joint on Tuesday (we didn't have turkey at Christmas) and we will have that hot with veg, cold with salad and baked potatoes. I will have it cold with coleslaw (low fat) for lunch for several days. I may do turkey non-fried rice for one meal.

I really like spicy stir fried noodles. You can use whatever veg you have in or just buy one of those packets of stir fry veg.

Boil some egg noodles.

Stir fry a big pan of veg for a couple of minutes with lots of garlic and ginger, add a tablespoon of peanut butter, some soy sauce, chilli flakes to taste and a teaspoon of honey. Add a ladle of the starchy water you cooked the noodles in to thin out the sauce. Drain the noodles and toss everything together.

I eat it with chopsticks as it takes me longer so I'm a bit more mindful while I'm eating.

I made something healthy and filling the other day for myself and DH from what I happened to have left in the fridge and store cupboard -
Sautéed 2 chopped peppers, a sliced leek (an onion would have done but the leek needed using) and some garlic, chucked in a can of toms, tomato purée, half a knorr veg stock cube and a good spoonful of smoked paprika. Simmered that while I cooked a bit of wholewheat penne (we only had 55g left, could have done with a bit more). Added a can of butter beans to the sauce.
Then into a dish and topped with a sliced mozzarella ball and 25g grated Parmesan and brown in the oven. Served with some green veg, that got me a good Zoë score and was filling even with the small amount of pasta.

We recently got a book 'Bold Beans', dd made us an aubergine and black bean parmigiana from that when she was home for Xmas.

-homemade meatballs with red wine gravy (I use the Hairy Dieter's meatballs recipe and cook in oven for no faff) served with either rice or mash and vegetables.
-Dutch stampot - mashed potatoes with your choice of other cooked veg mashed in (kale, carrots, chicory) with smoked sausage.
-chicken or sausage casserole (I use a Hairy Dieter's recipe for chx - celery, onions, mushrooms, carrots, white wine or cider plus stock and herbs - and Hairy Biker's recipe for sausages - mushrooms, red wine, onions, carrots, cannellini beans, tomatoes, stock, herbs). served with rice or mash.
-Chicken chorizo bake (again, Hairy Dieter's: cubed potatoes, quartet tomatoes and onions plus whole garlic cloves, salt and pepper in oven for 20 mins, turn everything over, add slices of chorizo and chicken thighs, sprinkle with paprika powder and mixed herbs, another 20 minutes, then add 2 peppers of different colours, cut into 3cm chunks, another 20 mins - so delicious! You can find it online somewhere or in their first HD book).
-split pea soup with smoked sausage, bacon, carrots, onions, leeks, garlic, brown beans.
-butternut squash soup (bns, potato, onions, garlic, stock, salt/pepper). Serve with fresh bread.
-make a proper batch of bolognese slow cooked over a couple of hours to freeze to have with spaghetti or lasagne (onions, garlic, mince, carrots, courgette, peppers, mushrooms, tomatoes, tomato puree, stock, red wine, herbs, worcestershire sauce).
-potato bake - layer thin slice potato with onions, bacon or ham and seasoning. Pour over homemade white sauce, cover with foil and cook slowly for 1.5 hours at 180 degrees. Serve with a big pile of veg of your choice (lovely with red cabbage and apple) or add thinly sliced veg into the bake.
-toad in the hole with homemade red wine gravy and veg.
-tagiatelle with roasted pumpkin or butternut squash, spinach, goats cheese and pine nuts (I don't use pine nuts any more as they're so ruddy expensive!)
-cottage pie (I use my bolognese recipe minus the courgette and peppers or for a vegetarian version replace the mince with brown lentils)
-scotch broth (can do a veggie version, the barley makes it super filling)
-chilli con or sin carne (onions, garlic, mince, kidney beans, black eyed beans, brown beans, tomatoes, chilli and paprika powder)
-any kind of curry - I like tomato based, my DH prefers green curries with coconut milk
-spaghetti carbonara - garlic, bacon, eggs, grated cheese and spaghetti, served with broccoli.
-and if you do really start craving a burger, make your own oven-cooked paprika potato wedges instead of oven chips

Great thread! Just the time for it.

I'm about to put something a bit like this together. https://www.bbcgoodfood.com/recipes/sweet-potato-cauliflower-lentil-bowl

I'm adding some odds and ends from the freezer and cupboard that need using up, e.g. falafels, an avocado, a dab of huummus, some elderly green beans from the freezer that will get mixed with a tin of aubergines in tomato sauce I found, frozen garlic sweet potato.

There will be more than we need tonight, which is great, because the leftovers will make at least one lunch for me in the next couple of days.

Another healthy winter recipe idea would be soup - more or less any kind. Some nice bread with it if necessary. If a bit low in protein you could have some cheese with it or a ham sandwich.
