Your best foolproof recipe for big, fluffy, crispy Yorkshire puddings?

Doing roast beef and Yorkshire puddings tonight as a second Christmas dinner for my dad's partner who is joining us today. I can do yorkies, but they're never as fabulous as I'd like. Anyone got a superb recipe?

I make Becky Excell cornflour ones too. As a side note I was furious when DH opened oven while they were in but they still worked out well

I can cook pretty well but when it comes to yorkshires AB is hard to beat.

BBC good food recipe every time!

Hot oil on 220 for at least 15 minutes first. Muffin tin and don’t open the door!!

Also make the batter and leave it to sit for at least half an hour. Whisk it again.

Did they turn out ok?

I sm not sure the recipe makes a lot of difference as long as you follow the heating the oil in the pan ahead of time... I made a batch of batter on Christmas day and let it rest for a few hours, I then refrigerated the rest. Then on Boxing day, I used the batter AND buttered AND oiled the tray and they were amazing.

If you're making 3oz of flour, 2oz of water, 3oz of milk, make it with two eggs rather than one. If you're doubling the recipe, use five eggs.

The oven and tin has to be smoking hot too.

The important stuff
Equal quantities by volume for the recipe.
Fork together gently.
Never, ever whisk.
Cook in tins that get properly hot. I use scoville.

Recipe
For every tray of six small Yorkshires. Use 2 identical cups or mugs to measure.
1 egg. Break into cup 1
Fill 2nd cup to same level with plain flour.
Add flour to bowl and make a well in it.
Measure milk in the now empty cup that had the flour in to the same level.
Gently break up the egg with a fork and start stirring the flour in from the edges. Remember not to whisk the mixture.
Once you have incorporated the egg into the flour, gradually add the milk. Still keep drawing the mix together without whisking.
Once the mixture is combined, season it and leave it while you heat the oil (it is fine to leave it longer but not necessary).
Heat oven to 200 degrees fan
Add flavourless oil or lard in your tins.
When oil is smoking, stir the mixture one final time and pour into the tins.
Cook for around 20 minutes.

Works every time for me. I've tried so many different recipes. Just make sure the fat in your tray is boiling hot before adding mixture
