Using up ham slices

My DD is the only one in the house who likes ham sandwiches. I know they aren't very healthy but since she's a very fussy eater and underweight I'm happy to give her anything she likes. I buy the smallest packs available but since they only last for two days we always have too many left over. Sometimes she might have only slice in a sandwich before I think we need to throw them away.

Any ideas what else I could do with them apart from sandwiches?

I've tried to Google recipes but can only find ones that actually seem to ask for ham pieces like pancetta. I've tried substituting the ham slices for pancetta, e.g.' Ive tried frying them lightly and putting them in pasta but neither of the kids liked that. I suppose similarly they wouldn't like them with eggs or rice either. Any other ideas?

Bonus question: do they really just last two days in the fridge as the storage instructions claim?

What about ready made sausage rolls? Do they also last strictly just for two days?

i have never used a pack of ham within 2 days of opening it and am still here to tell the tale!

I'd wrap it tightly in cling film and it will be good for 3-4 days - as PP says you can tell by the colour if it's gone off (goes from pink to gray-ish).

We also used to split the pack into portions and freeze them. No more waste.

I keep mine longer then 2 days, usually 5 days but up to a week if it looks and smells OK. If we need to use some up, I either put it in pasta, not cooked just cut up and mixed in. Or spread cream cheese along one side and role it up, we call in ham & cheese twisty wishties. Or omelet maybe?

Yeah, use within X days is food manufacturer code for 'throw it away and buy more'. Don't fall for it.

But I don't understand why you seem so overwhelmed by a packet of ham. They only seem to have enough in for a couple of sandwiches, 3 at most as some packs only have 3-4 slices in.

The one we have currently, which was the smallest I could find either in Aldi or ocado (don't remember where I got it from) has ten slices. I have seen packs with seven slices but never less than that.

I'll be honest, I don't pay much attention to the 'once open use within x days' thing. It was in the fridge before, it's in the fridge now, I'll carry on using it until the use by date. Never had anything bad happen, and hardly ever waste food.

This! I never pay any attention to that "once opened discard after x days" rubbish. I don't think it has any scientific basis - they just want you to buy more!

Pancetta is not ham, it is bacon. That’s why substituting it won’t really work.

I had to make ham sandwiches for the week & freeze them. Take out the freezer in the morning. Defrosted nicely by lunchtime

You can go to the butchers and buy ham there,
some polish shops sell ham by weight too

Thanks again everyone..just looking over this thread again for ideas. Opened the ham packet on Friday but I put it in an air tight container so I hope it's still good today. I think I'll make ham omelette today. Thanks for the suggestion.
