Soup!

I am trying to have soup for dinner more regularly! I often make cream of vegetable; French onion; Italian meatball soup etc and tonight am making a fish chowder.

What soups hit the spot in your family? I'd love to know!

I made this one the other day and it was lovely. I did fry the onion etc first.

I made a good one the other day, lentil, carrot and sweet potato. I sautéed the potato, carrot, onions and garlic with olive oil and garam marsala spices under a baking paper cartouche (got no lid for my frying pan) to soften while the lentils simmered in vegetable stock, then simmered it all up gently for a hour or so and blended. Had it with fresh coriander and naan bread, it was lush.

Leek and potato here too. Simples!

Soshitatgifts · 22/11/2023 08:30

Leek and potato always wins here-18 minutes in the pressure cooker

Thai noodle and salmon soup is a great meal - fish stock, lemongrass, coriander, pak choi, red pepper, salmon fillets, ginger

ApolloandDaphne · 22/11/2023 09:26

Good old lentil and bacon hits the spot here.

Tisfortired · 22/11/2023 09:27

We love a leek and potato, and also the Tesco recipe for ‘Magic Soup’ which is tomato, sweet potato and red pepper with coconut milk - delicious with a few chilli flakes and cheese on toast.

Chicken noodle soup
Tomato soup with a cheese scone
Green pea and crispy bacon
Baked potato soup
Italian wedding soup (broth with greens and meatballs)
Cullen skink
Corn and bacon chowder

idontlikealdi · 22/11/2023 09:37

We eat a lot of pho, laksa, and I love ham pea and mint.

AbbeyGailsParty · 22/11/2023 09:40

Leek and carrot, just a variation on leek and potato with one small potato to thicken it, then a load of carrots, leeks and an onion and veg stock.

olderbutwiser · 22/11/2023 09:42

One not to recommend: I added pearl barley to a fridge-bottom-soup instead of my usual lentils. I like my soups smooth. Liquidised pear barley has the texture of wallpaper paste and I have a vat of this stuff to get through as DH has rejected it (and he has my sympathy. Sigh.

witchypaws · 22/11/2023 09:42

This one, especially with the potato skins

justalittlesnoel · 22/11/2023 09:43

Chicken noodle (with matzah balls!)
Chicken gnocchi
Cream of leek and crispy bacon
Roasted tomato and red pepper

Bearpawk · 22/11/2023 20:14

I made a nice bean soup the other day.
Onions, celery, garlic, leek deglaze with splash of white wine, tin of white beans, veg stock, Parmesan bit of lemon zest and seasoning. I blended about a 1/4 of it to give a nice thick consistency.
Add some Kale at the end.

Might be better for the adults than kids!

Above recipe is great but timings needed adjusting for me.

And I added origano.

sprigatito · 22/11/2023 20:33

I make several huge batches of soup every month and freeze them in portions. We eat soup for dinner most days when we don't have guests. My usual repertoire:

Pea and ham made with slow cooked gammon
Sweet potato and butternut squash with coconut cream and lots of red chilli
Mulligatawny
Tuscan bean
Chicken and mushroom
Chicken tom yum with noodles
Tarka daal
Potato and leek with shredded chicken
Scotch broth
