Healthy veggie lunches to take to work?

If you're vegetarian, and trying to lose weight, and love delicious food (this one is very important!) what do you take to work for lunch?

I've been taking lovely salads but now the weather has turned and my delicious home-grown tomatoes have finished, I'm trying to think of alternatives.

Anyone got any inspiration?

Batch- cook a nice soup at the weekend. If you can't heat it at work you could invest in one of those double-walled Thermos food pots with a spoon (a bit like a flask but wider)

I have never managed to find a flask that keeps soup hot enough for long enough for me.

Figs are in season right now, so my current lunches are a handful of black grapes, a couple of figs and dates, Nairns oatcakes and either a bit of Cheddar or some Costello pineapple cheese (delicious). It feels quite autumnal.

Leftovers! I am assuming that your main meals are healthy though.... Maybe they aren't!
Baked potatoes if you have access to a microwave. Cook first and reheat otherwise you will be THAT person who hogs the microwave. With whatever toppings you like. And you can still have lots of salad.
Baked beans - either the tinned kind, with or without veggie sausages, or you could make your own bean stew and do whatever you like with it
Chilli - you don't necessarily need to have rice with it, you could have a vegetable side of salad.
Dhal - whatever type you like. Lentils, chickpeas, etc. And if you make your own you can control the spiciness.
Veg stew.

Practically any vegetarian food can be healthy, if you're not adding a lot of fat or sugar. Go for the wholefood options and Bob's your uncle! If you're trying to lose weight then you will need to control the portion sizes, especially of the pulses, but you can have lots of veg, reduce the carbs and you're all set.

Soups, stews, chillis, curries, casseroles.

Make sure there's plenty of veg, a protein source like pulses, bit cheese, egg, whole grains etc. Make one a week and freeze then use in rotation for variety.

I make a 'taco' soup with tomatoes, canned beans, canned corn, peppers, onions and spices. I usually put chicken in it (good way to use up a bit of roast chicken) but you could substitute for more beans, quorn pieces or mushrooms instead.

Frittata works well. Vary the veg you use. Keeps fine for three days in the fridge.

Can you batch cook? I take a portion of whatever I've got in the freezer. I use veg space for one pot ideas that don't use a ridiculous amount of ingredients.

Gnocchi with nice roasted or sauted veg. You can make a nice sauce with cashew nuts cream- just soak the cashew nuts overnight then blend with some water and lemon. Makes the dish creamy and wintery without the saturated fat! Gnocchi only takes two minutes to cook as well.

Well traditionally it would probably be black beans, pinto beans or kidney beans but I just use whatever vaguely suitable beans we have in.

Last time I used up a can of aldi mixed beans in taco sauce, which were similar to baked beans but mixed and slightly spicy.

I sometimes simmer the onion garlic and tomatoes in stock and spices and blend a bit as I like it quite smooth then put everything else in to cook through.

Spices were probably chili, cumin and coriander 'to taste', I don't really follow recipes I just make it up as I go along but you can find recipes on the Internet, often called something like 7 can soup because there's a lot of US based recipes that are just a load of cans and a pack of taco seasoning.

Soup! In winter I love carrot and coriander and curried parsnip them being slightly spicy makes them really warming
