Batch cooking ideas!

Good afternoon!

I am away for work soon for nearly 3 weeks. [groan]

DH does cook but he is shit at it and frankly i love cooking and want to make things easier for him and make some food for the freezer for him and the Dcs. Plus he is out of the house 12 hours and counting with commute etc.

DC1 has a limited palate as he has autism and sensory issues around food.

So far my ideas are mainly sauce based and then DH can cook and add carbs (pasta / pots/ rice) etc fresh.

  • bolognese sauce
  • creamy chicken casserole
  • creamy tomato and chicken casserole
  • beef stew
  • cheese and ham pinwheels which I will put together and then freeze raw and can just be cooked
  • lasagne
I'd love some further ideas.

Just to re-emphasise, it's not that DH is incapable, it is that i like cooking and want to make things easier for the family that something can just be pulled out of the freezer and heated up.

I batch cooking chicken pieces and salmon.

Tray bake with different marinades: lemony, mustard based, Asian, curry + yoghurt.....

Enough for 2-3 days.

Serve with lots of vegetables and/or salad.
Plus some kind of carbs: quinoa, lentils, chickpeas, whole grain rise etc.

Top with large quantities of herbs: parsley, basil, mint, dill, coriander.

ooh good idea. I have never thought of tray bakes. Lemony mustard flavours would go down very well.

Mainly he is quite fearful of new food. And has texture issues which actually I cannot quite get on top of re what they are (most veg has to be raw for example, but in stews if i grate them so they meld down as much as possible i can get them past him).

Fish pie.... hmmm...... not usually a hit, but if i made it very plain using white fish it might work out. I will experiment. Smile

Curry sadly a no. BUT.. (thinking) I could make a chicken type stew using coconut milk and no curry powder.. that might get past him.

This is easy (and in slow cooker for tonight). Remains will be portioned, frozen, defrosted, microwaved and served with rice. Soy sauce, a tiny amount of fish sauce, a fair bit of garlic, ginger, plus some turmeric root, chilli sauce, sesame oil, a squeeze of lemon....... you'll believe you'll be on Masterchef next!! 😁

(Make a batch - minus the herbs which you'll add at the end of cooking - enough for 3 or 4 meals and keep in thefridge. Delicious as a salad dressing too if you add some rice vinegar or wine vinegar or even b ACV...)
