What should go on a roast dinner

Following on from another thread and the brown sauce debate (not a chance)

What do you put on a roast dinner food and sauces/condiments does it depend on the meat? I will put yorkshires with everything and how many sides are people doing? I usually do honey roast carrots and parsnips but then its just basic boiled brocoli. Is everyone out here doing a cauliflower cheese as well? I saw someone woman on tiktok the other day did something she called creamed kale I've never bothered with a white sauce based veg dish. Plus if you go all out on a sunday roast what do you do to make it special for christmas easter etc.
Also who here is making a Sunday roast every week? I do one approx once a month but not through summer usually and never when we are having a heatwave.

I do a roast most Sundays and it varies what goes on.
Usually chicken or pork, sometimes lamb.
Always Roast and mashed potatoes

Today I’m just doing plain boiled carrots, broccoli and peas. So a small roast today. No honey roast as I’m feeding a baby under one, but will sometimes do that. Sometimes yorkies, not meat dependent, sometimes stuffing. Sometimes kale/cabbage/green beans/parsnips/sweet potato. We’re not ones for cauliflower cheese in my family, but maybe I’ll do it some time as an extra.

And we’re having apple crumble and custard 😋 Bloody love a roast.

Summer roast is usually roasted thighs in a lemon, garlic and oregano marinade, parmesan roasted Jersey Royals, paprika chickpeas with asparagus & green beans or salad.

Bog standard roast chicken is with potatoes, honey mustard glazed carrots, braised white cabbage, green beans, Yorkshires for some, pan gravy, stuffing and bread sauce.

Beef is with potatoes, the same carrots along with parsnips, savoy cabbage, brocoli, Yorkshires and diced swede, gravy, mustard and horseradish.

Lamb is with potatoes, creamed leeks, plain boiled carrots with sprouts, red cabbage, redcurrant gravy, minted peas and mint sauce. I also have mustard because I like it.

I only make mash for pork loin in place of a roast.

I like to differentiate the sauces and accompaniments depending on the meat so:
Beef with Yorkshire puds, horseradish/ mustard
Chicken with stuffing
Pork with apple sauce etc

I never associate mashed potatoes with a roast. Mash is for sausages or toad in the hole in my house.

Yeah I'm not a fan of mash with a roast either. Whenever you see Thanksgiving scenes in films they just have mash with their meal. Roast potatoes aren't a thing in America the way they are here. I'd be gutted at mash instead of roasties.

We have a roast at least fortnightly outside summer.

Meat - chicken, lamb, pork or beef
Yorkies only with beef - homemade using bbcgoodfood ultimate recipe.
Roast pots - king Edward
Roast parsnips in season
4 veg - varies according to season, usually only British ones. Generally quite simply cooked, and a variety of colours.
Stuffing with pork and chicken - paxo
Home made gravy with pan juices & potato water

Yum.

We regularly have swede in winter - cooked for quite a long time, mashed with butter and pepper. Yum.

Always have Yorkshire puddings, and cauliflower cheese is a must-have! Crispy potatoes dipped in the cheese sauce, mmm. I’m always a bit gutted if it’s missing.

We usually have the above with meat, carrots, broccoli and a homemade gravy.

Yorkshires
Honey glazed parsnips
Boiled carrots, green beans/peas
Gravy
Cranberry sauce jar if we have it in.

I have mint sauce with all meats, I know most people don't do this but I LOVE mint sauce. I don't have any other sauces on any meat. I also usually have yorkshire puddings with all meats. Stuffing with chicken or turkey.

Mostly do roast potatoes only, but occasionally will have new potatoes or mash. Never more than one type though.

Veg wise I always have carrots and peas. Then I'll usually have another two or there types of veg, cabbage, cauliflower, broccoli, sprouts, green beans, etc

My DH eats brown sauce with his roast, DD has tomato sauce with hers 🤢 One of my DGC (3) was over for Sunday lunch last month with their parents and insisted that his cauliflower was washed because of the cheese sauce 😂

We have a roast the last Sunday of the month.

Todays roast is sirloin of beef (medium rare), Yorkshire puddings, roast potatoes, honey glazed carrots, savoy cabbage (tossed in butter), broccoli and gravy.

Last one we had was roast ham, homemade potato rosti’s, broccoli in a cheese sauce and kale.

Christmas is the addition of pigs in blankets, red cabbage, cranberry sauce, stuffing etc that makes it.

For us its pork or chicken, veg is either broccoli/cauliflower/ cabbage/sprouts and maybe carrots. Yorkshires with everything 😄 roast potatoes and gravy. Regardless of what meat it is i ALWAYS add mint sauce to my gravy, mix then pour on everything.

Goose Fat to the potatoes
Pigs in blankets
Bread sauce
Stuffing mixed with sausage meat and wrapped in bacon
Homemade Gravy instead of Bisto

Went for a roast recently at a restaurant and had cauliflower puree, Yum!
Intend to try and make this at home.

I only roast chicken - everything else too expensive to experiment with - whenever I cook beef or pork, it winds up terrifyingly bloody - even with a meat thermometer.
With the chicken we have:
Mash
2green veg
Gravy
We never have roast potatoes with gravy - I agree with pp that it just makes them soggy. With mash you make a well and pour the gravy in!

My dream roast would include-
Roast chicken
Roast potatoes
Cheddar mash
Sage and onion stuffing
Mini Yorkshire pudding
Peas and carrots
Lots of gravy

Roast Chicken here pretty much every Sunday. The homemade gravy and the rosemary potatoes are the family favourites so they're always a must. Then I change up the vegetables weekly. This week we are having; bacon fried sprouts, honey glazed and rosemary parsnips and roasted broccoli

I also do homemade Yorkshire puddings every week too, purely because they're my absolute favourite and enjoy them the next day too.

Yorkshire pudding only with beef, stuffing only with poultry or pork.
Always roast potatoes.
Three veg - today it is carrots, savoy cabbage and roast parsnips.
Always gravy.
Sauces - mint or redcurrant with lamb, horseradish or mustard with beef, apple with pork. No sauces usually with poultry unless turkey at Christmas which has cranberry.

I cook a roast pretty much every Sunday.

I currently have a chicken roasting in the oven and have made cauliflower cheese and will have potatoes ( haven't decided whether to roast them, carrots and cabbage. Will also make gravy. Got some lovely Yorkers in the oven but don't usually serve them with chicken, but may do some stuffing. Roast beef with all the above and horseradish sauce, roast pork ditto with apple sauce and roast lamb with mint or redcurrant jelly. Love bread sauce with chicken and turkey 😋 but can't be bothered today. Oh and love roast parsnips too but couldn't find any when out shopping yesterday (M&S).
