Boring one. How best to use this left over veg

I have steamed broccoli, cauliflower, carrots, and a couple of roast potatoes left from yesterday. I've diced it all up small.

I also have a bit of cheese sauce left from the cauliflower cheese.

Shall I mix them together? Bake it? Fry it?
I'm not good at turning leftovers into something new.

Any suggestions?

I think if it’s already cooked and chopped up small it’s going to be soggy but if you wanted to do something with it them cook some pasta and mix it all together.

Spanish omelette. Just mix it all together with 4-6 eggs and bake. Bit of cheese on top. You’re welcome 😁

I'd put a beaten egg in, shape, dip in flower and shallow fry in little cakes. (or oven bake) Similar to bubble and squeak. Put a bit of chilli in too if you like, salt and pepper. You could probably freeze once shaped if you don't want to eat them today. But tbh if you have them today you are more likely to eat them!

I wouldn't make soup as it's already been cooked once and to me it won't taste as good as soup made with diced raw veg.

I’d use it for soup. Melt down some onions, add the leftover veg, plus stock, simmer, season, blend. Grated cheese and some croutons over each serving.

Though I also like the bubble & squeak idea.

I think I'll try shaping into cakes and fry, like a bubble n squeak type thing.

It’s a brilliant word isn’t it!

If the sauce is thick, I’d lob that in with some extra mash potato, add in some more cheese and butter then the diced up veg and if you’ve got any other root / green veg looking a bit sad chuck that in after either boiling it or steaming in the microwave. Put in to an oven dish with some grated cheese and maybe some breadcrumbs on top and bake for about half an hour.

Do you have some onion, garlic or leeks you can fry up to mix with the veg for bubble and squeak? Will be tastier!

Alternatively can you put it in a dish, top with the cheese sauce (thin it a bit with milk?) And breadcrumbs or ground nuts for a crispy topping.
