Help me plan a great break

I am currently battling a bad bout of anxiety. In a couple of weeks my husband and I have a week off. We have the offer of a group holiday with some friends abroad but to be honest for the first time I just don't think I can face the airports and flight and screaming kids round the pool (no offence) so I'm thinking a UK break.

Any ideas for my criteria would be really welcomed as my brain is a bit scrambled at the moment.

Accessible by train.
Coastal preferable but country OK too.
Lots of good food options
Nice scenery a bonus but more to relax not into hiking
Max 4/5 hours train journey from the Midlands
Somewhere with a nice mix of life and tranquility

I don't think this place exists!

Maybe I should I just get on damn plane and enjoy the good weather but it feels like a chore and I want to look forward to my time off and keep it as chilled as possible for my mental health

Topsham near Exeter? Has some lovely pubs, good restaurants in Exeter, coast and Dartmoor to explore

The North East coast is the most accessible by train as the Newcastle Metro will take you all along the coast. You can also get a train along the Tyne Valley line to Hexham which is a beautiful place. Durham has the most glorious cathedral.

There are lots of great pubs and restaurants in Newcastle and beyond too.

If you like history, Beamish museum is a great place to visit.

Budget?
Self catering (by which I mean eat out!) or hotel?
Spa/pool facilities?

South West Scotland. Train from Birmingham to Carlisle, change to Dunfries.
After that a Taxi or bus to Kirkcudbright. A beautiful coastal town with healing properties . The public transport is limited, but you did say you wanted peace and tranquility.

Budget around 1500 absolute max for somewhere nice to include everything preferably a week away self catering and trains
