The perfect omelette

Don’t really enjoy these but I eat them sometimes because we have hens and often a glut of eggs to get through.
What’s your tip to make the perfect omelette?
I’ll admit to my usual method which is to crack the eggs into the hot pan with butter already melted, break the eggs up a bit, season, start just folding it up and bit and pushing it about in the pan, once it’s setting around the edges I will add my fillings (usually cheese and/or mushrooms that I will have already cooked;), whack it under the grill for a minute to set the top and then flop it onto a plate.
It’s not especially appetising but it fills a whole and uses up some eggs!
disclaimer, I’m NOT the cook of the house, very rarely do anything other than assemble components for a salad 😂 I know my method will horrify many, I’m okay with this!

I’m confused about why you’re folding it before adding fillings.

I wait till mine is nearly set, add fillings, fold over and cook a bit more. No grilling required. Nice melty cheese in the middle.

Oh I don’t really know, it’s a haphazard approach, maybe I don’t fold, I kind of just move the egg about while it’s starting to cook.
They’re just always a bit bland and boring!

Maybe it’s the fillings, egg flavour isn’t very interesting. Sometimes I use chorizo and fry that first in the pan before chucking the eggs in - that definitely enhances the flavour.
I grill it at the end as otherwise the top is still what I would describe as ‘snotty’. Yuck!

I fry sliced courgette and garlic in butter as a filling sometimes, that’s very tasty (if you like courgette).

I do what you do so I definitely won’t be allowed on masterchef ! beat the eggs up a big, add to hot oil, move the un cooked egg into the centre, add filling once it’s all soft and not fully set, wack under the grill than dump it on a plate! Bon appetite 😜

Use a cast iron pan, add enough butter that will cover the bottom once melted. When butter is melted and just beginning to foam (don't let it burn), add mushrooms (if using) and toss them in the butter, leave to saute.

Beat the eggs in a bowl, add salt & pepper, tip into the pan. Using a palette knife gently lift the edge of the omelette and tip the pan so the egg runs into the gap. Keep doing that till egg doesn't run any more and leave to cook for a minute or so. Add cheese, allow to melt, fold over omelette and tip onto plate.

I couldn't get it right until I started using a much larger pan, then I didn't need to do any moving about, it would cook through anyway

I use an omelette maker. You just pour the egg and throw in whatever veg/meat/cheese then close the lid until cooked.

I've just made an omelette

I put the butter / oil in the pan

Then add my whisked eggs to the pan let it cook untouched for a few minutes then push the edges to middle to let any raw egg move over to the side to cook

Then I flip it turn the heat off and omelette is ready after 30 seconds to a minute

I like to drizzle mine with sirachia sauce. I think thats a hang up left over from my travels to Thailand years ago.

Adding cheddar is delicious too.

Oh yes I always season with salt and pepper, sometimes add onions or sliced cooked potato

I bought a non stick pan which makes cooking and cleaning and omelette much more efficient for me

You need to season the eggs well that makes a huge difference. I do what you do but I usually cook the mushrooms first then put the eggs in over them and then cheese sprinkled on before I fold in half.

A lot of cheese helps too.

And chives, parsley and chilli.

I put my eggs in a small blender and blend until frothy the omelettes are always light and fluffy.

Whisk with salt and pepper and a little oregano then add to a hot pan is perfection. Whisking is needed to get air in to make the omelette light and fluffy.

I actually prefer it simple but if adding toppings I like a little ham/bacon, cheese and onion. If adding then I would fry the onion and bacon first then add the egg then after a minute add the other toppings.

Quite enjoy it with a side of baked beans.

Now want an omelette for my dinner.

I do it exactly as described here by Mochudubh, except I use a non stick pan.

Sometimes I do a version where I fry the mushroom in butter first, and then add the beaten egg and they get incorporated vs being part of the filling (I then add cheese on top before folding).

I whisk up two eggs with a fork and a little milk then add in chopped red onion, parsley and chopped tomato, mix up, pour into hot frying pan then add some chopped cheddar. Flip in half once your omelette is cooked enough to do this, cook another 1-4 mins depending on how you like your omelettes and serve.

I LOVE this and it's v tasty 😋
I don't bother with salt as cheddar is quite salty already.

I do it virtually exactly as happidaze describes.

How about a frittata instead? Fry spring (or red onion) in olive oil with sliced ham and mushrooms for a few mins. Whisk 6 eggs with s&p, grated cheddar (about 75g) & some parsley. Pour over the veg mix, leave to cook (medium heat) for about 3-4 mins then put under a hot grill for another 5 mins. Turn onto a plate to serve. Many variations possible - green veg and chunks of goats cheese are good.

As well as making a nice meal, it always gets eaten when I Ieave the leftovers in the fridge too!

If you aren’t great at making omelettes, slow cooked scrambled eggs are much more forgiving and will come out creamy.

cook over low heat and stir slowly so you get big curds. When about 2/3 to 3/4 of the way cooked, mix in your add-ins. Turn off heat at about 95% done because you will get some carryover cooking.

For me, the key is to whisk the eggs in a bowl first with seasoning (salt/pepper/herbs etc). Otherwise I agree it can be bland.

Lots of cheese crumbled into the top and allowed to melt a bit before folding, and a spoonful of chilli jam on the side.
