For someone who has enough money to buy anything and is also very minimalist but spends quite a lot of time traveling and is often eating snacks instead of proper meals.

I honestly have no idea what to buy

Do they like chocolate? If so I would suggest Lily O Brien chocolates from Ireland. They are delicious. If you wanted to spend more, then a subscription for a monthly flower bouquet. My late brother did this for me and it was a lovely gift.
Other ideas .. National Trust Annual membership if they like historic houses or a good pen.

I would be careful with travel items, DH travels a lot for work and has his own system and is peculiar about his items so unless you know this person really well, I would stay away from this.

Yes, this. By giving them something that they have to use, wear or look at, it's likely you're giving them something they'll either put up with despite it not being the one they'd like, or they'll give it away or just shove it in a cupboard, and either way, feel guilty about it.
