Last minute guests tomorrow. Throwing a biryani marinade together now (chicken, curry paste pot, yoghurt, lime curry powder)

Can I make a cauliflower curry side with:
Onions
Cauliflower
Tinned tomatoes or pasata
Curry powder
Garlic

All the recipes I've seen have coconut milk which I don't have!

We do roasted cauliflower just bung jn over raw with Indian spices and some oil and roast for 20 mins ish .. it's so delicious. Or up could make Bajii .. fry and then mould together with and egg , then bake with spices

Yes I reckon so.

Onion first. Then ground spices, then garlic. Then cauliflower

Wouldn't have thought about the oven! I have an airfryer too...

Yes

Brown onions, add in the passata and spices and cook it down. Then add the cauliflower until its cooked. You may also add sweetcorn or potatoes if you have any.

I've made curry from those ingredients. Just make sure to fry the dry spices (curry powder) in some oil before adding the liquid, otherwise they sit on the surface of the tomatoes. As a PP said, adding the spices to the pan after the onions works well. It won't be a creamy sauce but it will taste nice as long as the dry spices are treated right.

With! Otherwise it will be very dry and you're not going for a tandoori here.

1 and half teaspoons of cumin seeds in a pestle and morter with 1 tsp of turmeric, 1 tsp ( or to taste) of chili powder and up to a teaspoon of salt depending on size of cauli. Grind up, add 3 or 4 tbsp oil and drizzle over florets. Roast for 20 to 30 minutes.

It us delicious for so little effort!

TerrorOwls · 05/09/2023 23:53

Yes you can. Just cook the onions the gently and slowly til they're golden brown, add garlic and spices and seasoning, add tomatoes and cook down then add cauliflower and a bit of water and cook.

TerrorOwls · 05/09/2023 23:55

Depending on the size of cauliflower, you might be better off with half a tin of tomatoes. Just so it's not too tomatoey and there's some balance with the cauliflower.
