I'm boring myself stiff with my own everyday cooking and I would love some inspiration. I'm fed up with pasta - can anyone help with relatively simple healthy ish meals please?

Big fan of Rukmini Iyer's all-in-one tin tray recipes here.

Quick, healthy, minimal washing up and less faff on a busy weeknight.

She does a few different one tray books: vegetarian & vegan/ global recipes / sweet dishes etc.

Our go-to is the 30 minute dishes one.

Also, recently discovered this. Tastes delicious, way more interesting than the ingredients would suggest!

Obviously they say sachet so you need to adjust for your taste but we do roughly a spoonful of tumeric and ginger then use some curry paste for simplicity. Tastes even better the next day

I love the sorted show on YouTube. Some of the older stuff has good basics on mid week, they also have an app for mid week meals
Or something like Hello Fresh for a few months to get out of your rut.

spend some time on a Sunday with your laptop or phone and meal plan for the week. E.g. I roasted a chicken on Sunday - Monday was a chicken tarragon pasta, I am trying to get into the groove of using my slow cooker during the work week - prepping the night before and putting it on in the morning.

I was in a severe rut for months I now spend some time on Saturday with my cook books and anything I have bookmarked on SM to meal plan for the week which also helps with $$

I don’t have the head space to make loads of different meals. We get hello fresh deliveries. Two meals a week, which staves the boredom. No need to shop for specific ingredients as it’s all included in the box. Then I get the ingredients for the recipes we like best. I’m tempted to stop as it is more expensive as there’s only 3 of us but aware that if we do, we will probably just start eating the same things over and over again.
