Making up salads for the week

Does anyone else do this? How do you make it stay fresh once its all chopped, ie cucumber etc?

I've been shopping this morning and want to prep my salads today so I don't need to think about it through the week but am worried they will shrivel up and go a bit nasty.

Can I put a bit of kitchen paper in the tub? 🙈 just remembered I haven't got any 🙄

You can make a salad of pulses (beans, chickpeas etc) in dressing ahead then just add the fresh veg and herbs each day.

Have a look at ‘nourishing healthy recipes’ on Instagram. They do some great make and store salad recipes. There is a lovely one that you make with chickpeas hummus and roasted veg. I tend to store a couple in the fridge and then freeze one to eat later in the week. Not strictly you cucumber and tomatoes salad but still very healthy

Certain salad ingredients keep better than others. I would avoid any lettuce. Often I make up a chopped salad at the start of the week then on the day I eat I add lettuce/baby spinach and dressing

I wouldn't want to do this for a whole week tbh.

But you could make a cous cous or quinoa base, with maybe chickpeas and some roasted vege and then add fresh leaves and feta to it on the day. I reckon that would last 3 days or so.

Prepare elements of it then just assemble it quickly the night before.

So: oven dried tomatoes will last for a week in the fridge. I roast butternut squash in a little oil mixed with rose harissa, those are good for several days. Mangos don't go brown if cut a day in advance (mix in a teaspoon of dessicated coconut - it's delicious!)
Radishes will keep a day or two chopped as will carrot ribbons and peppers.
Then it's just slicing the lettuce and cucumber and adding in a spoonful of whatever is preprepared.

My downfall is that my lovingly assembled lunch stays in the fridge and I only remember it halfway to work. So now I pop out and put it in the car the night before.
