Easy vegetables to grow in pots?

I currently grow tomatoes in pots, but that's it. What other veggies are easy to grow outside in pots and tubs, particularly interested in those that come from abroad (trying to be more environmentally friendly!).

Spring onions - if you only cut the green bit off then they come back up to three times. Wild rocket and land cress are perennial. Giant red mustard leaves are so easy and grow quickly.

I grow courgettes in large pots and have had a great crop this year. Probably around 20 courgettes so far from two plants in a large pot each and they're still coming.

Pumpkins do well in a pot if again, it's a very large one (trug sized) and you go for a small pumpkin variety like Baby Bear or Amazonka.

Chillis as well as tomatoes but the chillis are kept in one of those mini plastic greenhouses.

Potatoes.

Jerusalem artichokes.

Dwarf french beans (you don't need supports so keeps it simpler.)

Lots of salad leaves are totally fine.

Spring onions.

I've never done particularly well with onions or garlic in pots, I think they need a bit more space.

The key things to remember are to mix lots of organic matter (well rotted manure etc) into the compost when you're planting up your pots and to feed weekly with tomato feed once anything is fruiting as the nutrients will quickly get depleted from the compost in the pot.

I have a couple of old tin baths and I find all of these very easy to grow - radishes (the easiest), tomatoes, courgettes, runner beans, chard spinach and rocket.
