Making veg more interesting

Just looking for some inspiration. If having veg as a side, I tend to just cook it the 'boring' way, so usually steamed and sometimes add a knob of butter. I'd like to make it a bit more interesting. I'm talking about just standard veg side-dishes like garden peas, broccoli, carrots, sugar snaps, sweetcorn etc.

Please share what you do to bring your veg to the next level! (I'm happy to use oils, herbs, spices, seasoning etc)

I made some spectacular carrots and potatoes this weekend.

Carrots sliced into batons, covered in thyme, salt & pepper and teaspoon of sugar and roasted for 20 minutes.

Potatoes cut into cubes 2cm by 2cm and boiled for 5 minutes. Shake in colander with tbsp plain flour, cover with thyme, salt & pepper and then place on baking tray with hot oil and roasted for 25 mins.

I made sag aloo last night with cubed sweet potato and spinach. It was delicious!

Mainly I roast them for flavour but cauliflower is nice with cumin

mashed carrot and parsnip or carrot and suede

stir fry (Cajun or sweet chilli)

would love new ideas though

From the veg you've listed, I'd say stir fry them slightly until some of the edges turn a bit brown/golden so the flavours become enhanced and slightly caramelised. Garlic, salt and pepper should be simple enough if you're not too adventurous

Lots of veg is nice if you roast it with a little oil, some pepper and some soy sauce.
Broccoli, Brussels sprouts, parsnips.

Green beans are fab if you lightly steam then fry in olive oil mixed with butter, and fry in some garlic then add lemon juice (from a lemon - not jif) and olive oil.

Carrots--cook whole in oven, drizzle tiny bit oil and rub little bit of honey, add whole garlic + Rosemary, roast.

Sweetcorn-add white sauce with bit of stock cube.

Peas, add mint and butter.

Cauliflower - Cut in half and roast in oven, add garlic bulbs, season and squeeze lemon. Turn to cook evenly.

Any veg- Cook in tray in oven, season, add herbs, bit of olive oil.

Chop onion or leeks, sweat for five mins, add some cumin and season8ng, or whatever spice you like. Add shredded cabbage or sprouts, fry a bit, then add coarsely grated carrot and fry a bit more to to crunchy or soft, however you like it. You could stir in a bit of cream or crème fraîche to serve.

Green beans and tender stem broccoli are lovely cooked with garlic in a griddle pan.
Field mushrooms are delicious filled with Stilton and baked in the oven.

Most veg taste lovely cooked in butter and splash of soy sauce. Carrot I love to cook it with butter/sugar/s&p/OJ/herbs.
Peas lovely steamed with chopped garlic/olive oil/lemon juice/s&p
