Easy healthy dinners for 78 yr old carer

Just that. He’s 78 full time career for his wife who is completely I’ll wit Rheumatoid Arthritis
he really struggles with cooking -he will get stressed about frozen pizza, follows instructions to the exact minute.
now pre diabetic due to too many m and s ready meals.

is gusto or ‘cook’ frozen ready meals any good?

Really really easy healthy ideas please! I have a few, but you all probably have more!

mine -

slow cook a mound of tomatoes with garlic, whizz up and freeze as : soup , over pasta, sauce for chopped up mince ( meatballs)

chopped raw veg over cooked pasta, bung in microwave to melt Brie into it.

stir fry rice

fry chicken, sprinkle with garlic granules, and whatever herbs and spices in the cupboard.
have with noodles.

salmon on veg, bung in oven with lime and soy.

Slow cooker stews, cook four portions and freeze the other three. Add potato at the time of cooking. You can get a lot of veg into a stew. You can also add frozen veg to the meal. I do lamb, beef and pork for my father to have when he's under the weather.

I think I’ll batch cook a load and drive down every few weeks. Would love to get them to move closer, but they won’t.
Wiltshire farms sounds a good one too. Parsley gets good right ups and is vacuum packed , what a great idea!

My Dad at a similar age was enthusing over the air fryer he bought - he was cooking sausage and chips and loved it. There are lots of other things too, maybe get him a food Ninja and try out some of their recipes with him?

Ask if their local council still has a meals on wheels service, ours does and they are truly excellent quality and value.
Air fryers are fantastic (even kids can use them easily) and they use a lot less energy than putting the big oven on.
Would they eat things like ready cooked rotisserie chicken with steamed veg?
Quiche and salad.
Bought pie and mash (with veg).

live devised a plan with DH..I’ll cook extra every night to freeze and take down a whole load once a month or so. That way I can squeeze in extra veg.
I’ve sent them Wiltshire etc menus too. Fingers crossed.
