Share your Thai Green Curry recipes please

This is one of my favourite dishes when I'm out.
I can make a good chicken tikka but never tried to make a Thai curry

So far I've bought:
Chicken breast
Thai green paste
Green finger chillies
Red chilli
Green & red pepper
Baby corn
Sugar snaps
Lemon grass
Coriander
Lime
Coconut milk

What do you put in yours?
How do you make it just perfect?

I don’t cook meat so no idea about the chicken but I tend to put the vegetables in a roasting tin and roast them off. Then stir in the paste, coconut milk and lemon grass etc. back in the oven for a bit.

Is it worth marinating the chicken?

If you have bought a decent paste then you don't need half of those ingredients as they are to go in the paste if you are making it from scratch. Thai Taste is the nicest. I have never found a supermarket paste that was any good. Cook the paste on its own in a little oil at first and then add some of the cream from the top of the coconut milk (don't shake it before opening). Then add the chicken to seal it, then any vegetables, a tbsp of fish sauce, and the rest of the coconut milk. Serve with fragrant rice, not basmati.

Be warned that finger chillies are incredibly hot so use with caution and wash your hands thoroughly after chopping!
