What's everyone's go to summer dinners?

So I've got stuck in a rut with meals and I'm determined to shake it up. I've tried two new meals this week, a paprika chicken and roasted chickpea dish last night, which was okay but nothing amazing and a really delicious somerset stew with cheese & parsley mash this evening.

Please share your light, tasty summer ideas!

@ginslinger, I love adding lentils to things, not sure why I haven't thought of adding them to a salad before, I'll give it a go.

To all those that cook fish and have that with salad, what's the easiest, yet tasty way to cook fish. I don't seem to have much luck with cooking fish. I'm not a fan of salmon, but I like most things apart from that.

Usually some-protein-and-some-salad but I also do this salmon dish and it's lovely. I add salad to the side of course!
