Need very soft, tasty, low cal main course idea?

Can anyone come up with a very soft , low cal main course idea? My friend is coming for dinner tomorrow. They’ve had a lot of dental work and is on a soft diet for 2 weeks. Also is on serious diet too. Normally in this weather I’d do a salmon/chicken/ Greek salad with nice bread. But consistency of whatever I make needs to be something on the lines of second stage baby food by the sounds of it. I don’t want to be stood over a hot stove making a risotto or something as my flat feels like an outpost of the Kalahari Desert right now. Can anyone think of anything that meets this brief because I’m really struggling to come up with something. Thanks

Not massively low calorie, but not terrible either.

Cold salmon fillets with soft textured potato and egg salad, greens for you.

Olive garden tortellini soup is soft and tasty, doesn't take long to make and you can substitute the tortellini with gnocchi which she good to eat with a delicate mouth, you can Google the recipe easily.

Baked cauliflower cheese with shredded ham mixed in.

A nice quiche with soft boiled Jersey royals and salad.

I’d do gazpacho given the weather. Then ice cream maybe (but low cal but the meal overall will be.)

Baked potatoes or baked sweet potatoes and your friend just eats the middles - extra skins for you. You could microwave first and finish in the oven.

Could eat with cottage cheese, grated cheese (melt it?), well mashed tuna mayo.

An idea for your friend as she begins to recover we had hot dogs the other day with soft white rolls and the kind of hot dogs that come in a tin. They are soft with no skin and ours were 68 cals per sausage.

Salmon should be fine. I have ongoing dental issues and it’s one of my staples! Could serve with some lemony wilted spinach and with mash ideally although that might not be low calorie enough?

Sorbet or affogato for pudding.

Acknowledge that mash isn’t ideal at this time of year but it’s definitely the best for a sore mouth!

I didn’t expect so many ideas. This is great. I think I’ll go for salmon and mash and some puréed veg. Never thought of low cal ice cream or frozen yoghurt but definitely going to get some and can make some strawberry or raspberry sauce to go with it. Thank you everyone. My mind had gone blank.
