Single people: what are your go-to meals?

I have fallen out of love with cooking and it feels like a chore. I seem to cook the same six things (that recent thread rang very true!) and am stuck in a rut. Need some inspiration.

I don't mean single parents with kids, or if you live with a partner only - I am interested in what people who live completely alone cook for themselves on a weeknight. Can be with meat, veggie or vegan. I can get hold of most ingredients. I definitely need to eat more green veg.

Current rotation is:
Ready-made chicken pie with potatoes and veg
Saag paneer
Pasta with tomato and bean sauce
Mushroom and pea risotto
Some sort of stir fry
Sausages and puy lentils
Pizza
Dhal and rice

Any ideas welcome. I often batch cook but sometimes I just fancy something different.

This lady has some lovely one pot , one person recipes. There are a couple of hers that I have prepped bits ready in the freezer, all portioned up, so I can have a meal ready, using just one pan/dish, in 20 minutes with minimum fuss and effort.

BuddhaAtSea's comment about choosing veg that last well has reminded me of my veg storage tips to stop food waste. Things with roots/stalks often last longer if you keep them in a jar with a tiny bit of water (1cm) like flowers in a vase eg spring onions, lettuce, globe artichokes, cut herbs, broccoli. Some things will keep growing😂I currently have a little gem lettuce that is about a month old that is has 50% regrown what I have eaten. Spring onions can go back in the ground if you have a garden.

Things like chillis and ginger can be grated from frozen so any extra I don't need goes straight in the freezer. Peppers freeze well without blanching so excess get chopped and go straight in the freezer too. Ditto excess soft fruit before it goes mouldy or I dehydrate it for snacks/adding to cereal.

If veg starts to go soft, most things can be revived in ice water in the fridge and can last for a week or more longer in the water.

I confess when my H is away with work and I'm on my own I eat a lot of M&S or Cook ready meals with additional veg, variations on gluten free pasta and home made sauces and omelettes and salad

I tend to just buy bags of frozen veg for the most part (not salad obvs!)
its easier to store, portion and stays fresh much longer

I aim to cook two or three times a week, mostly at the weekend, and then the microwave is my friend! Nearly always veggie, with a few sausages or bacon thrown in. Faves at the moment are:
Big tray of roasted mediterranean veg with halloumi thrown on top - leftovers can top a green salad/baked potato/pasta.
Various veg curries from a fab book called "meatfree Mowgli" - I tend to make a couple at the weekend when I've got time. Particular favourites are an aubergine dhansak, a cabbage curry, beetroot and cauliflower curry.
Slow cooker mixed veg casserole - bung tins of beans and tomatoes in the slow cooker with whatever veg you have left, and add some herbs, and just leave it to get on with it all day. Leftovers can be blended to make soup!
