Parents taking my child (age 4) abroad , he does not have the same surname as them, will they need to bring some sort of documents or a letter from myself to show airport staff?

Bit worried the airport might flag something up with child being under 18 and having different surname to them

When my parents took my children away with them we had a letter that was signed by their dad and me. It had all our addresses and contact numbers and all their passport details. We also sent their birth certificates. We used a template from the internet. The people at the airport were fine with it.

Yes. Look on the govt website. They should take a letter signed by you and the other parent saying you give them permission to take him.
Take a copy of his birth cert naming you as well.
They may well not be stopped, but they might be. Also check the other country's rules, which may be different. (some countries are more strict and require a notarized letter)
