Does anyone make their own sourdough?

I posted earlier trying to find a nice sourdough in the supermarket since Tesco have discontinued theirs and now I have started researching making my own. Does anyone do this? Was it difficult to get the hang of?

I have done this, and enjoyed it. I try to avoid bread now, cos calories. I bought the '5 minute bread' book, which was well worth it. You make a large portion of the bread mix, then pull pieces off it to fresh bake.

I don't, but I'd like to try doing a rye / seeded one that's as low FODMAP (lower gluten) as possible and good for toasting.

I do this, I made my own starter which took about 2 weeks to get going. The bread is lovely and rolls are good too. There’s no kneading -you can just mix and leave. I’m currently experimenting with different water percentages. There’s a website called The Clever Carrot which has lots of useful info.
The glycaemic load of sourdough is lower, and shop bread is considered Ultra High Processed nowadays, even supermarket sourdough when you look at the ingredients .

The co-op sourdough rye is ok. I never attempted sourdough again after trying in lockdown like everyone else. My starter failed and I spilt it on the living room carpet. It never properly cleaned out!

Have done on the past. Easy if you go for a rye starter, but a lot depends on the temperature etc where you are. Also, you do need the fridge space 😀

To add, it does impede mobility! I remember how at the height of the sourdough crazed there was somebody running a sourdough hotel for travellers at Arlanda airport in Sweden.

I decided during lockdown that sourdough was man-baking. All that time and kit and faff in order to produce one loaf of bread women are expected to be impressed by........

I don’t have any kit, just a jam jar to keep it in the fridge and a jug for getting some of it going reading for baking. I rise it in my baking bowl and cook it in a casserole dish. The method I use is non knead so you can just leave it be for most of the time.

DH makes his own. Took a few tries and is still like little bit random as to how well it turns out, but it's good when it does.
Managing the sourdough starter is an art. He mixes the dough in the breadmaker and then bakes it.

I think this is just so wonderful. Was there an annexe for kefir grains?
