Hi everyone, I was wondering whether anyone has any positive stories about improving non-celiac gluten sensitivity? Because I really miss proper pasta!!
Background: I developed intolerance to gluten and some other foods over the past few years, while I've had long-running post viral fatigue (diagnosed as CFS/ME). Prior to that I had a pretty much cast iron stomach.
The cfs/me situation is finally on the improve, which seemed to coincide with a number of things, including recognising the gluten intolerance and cutting it out of my diet, stopping work completely (and therefore massively reducing stress levels), taking up meditation, improving my iron and vitamin d levels, increasing fermented foods and reducing sugar, and taking a few supplements. I don't know if one of those or a combination has made the difference to me getting better, or if it was just the passage of time.
But I'd really like to know whether there is a chance the gluten intolerance might improve as well, and if so what people have done that has helped with this? Any positive stories or tips would be great to hear!
