At the end of some days I really can not be bothered to spend ages creating dinner and the kids hate stuff in the slow cooker so need some inspiration.
What do you rustle up when you are in ‘can’t be arsed’ mode, that’s healthy (ish) and suitable for a week day family meal?

Beans on toast.

A tin of curry sauce and a packet of mixed veg - vegi curry just do some rice with it.
As above but a packet of passata and add spices to make a veg chilli.

What are you cooking in the slow cooker? You can use it to make baked potatoes then just add cheese and salad.

Or a whole chicken, if you like crispy skin take it out and put in the oven for 15 mins while you make veg.

How old are the children? Can you get them involved?

Boiled egg with toast soldiers, maybe with something ele.

Beans on toast (can add bacon, cheese, tuna).

Sardines on toast.

Bubble and squeak - make too much potatoes and cabbage with a roast.

Toastie sandwiches.

Gnocchi tray bakes are so easy and you can chuck whatever meat and veg combo you fancy on there

Fajitas - chicken, onions, peppers stir fried with some cumin, chilli, and passata, and served with grated cheese. Or if you’re feeling really lazy use ready cooked chicken and salad with a Nando’s type sauce. Or quesadillas - put a tortilla wrap in a dry frying pan on a lowish heat, add a filling - cheese, ham, sluiced tomatoes, ragu, mushrooms, etc. Put another tortilla on top and wait until the cheese starts melting. Turn it over and cook on the other side. Cut into quarters and serve with salad and some tortilla chips.

Rotisserie chicken, bag of salad, tub of coleslaw, baguette and butter.

Full English for dinner - I very rarely do this but my kids absolutely love it.

Gnocchi bakes and pasta bakes feature heavily in our house as you just chuck your gnocchi/dry pasta in an oven proof dish, add sauce and whatever veg you have out of the fridge then top with cheese and shove in be the oven. I usually make two at once so I have a second to freeze for another day.

Fajitas are really quick and we usually do veggie ones where we just fry onion, peppers and add chickpeas and mixed beans.

Fish tacos. Just frozen breaded fish cooked in the oven then on a tortilla wrap with lettuce, onion, chilli sauce and aioli/sour cream.

Boil some spaghetti then as it cooks, fry chorizo and garlic in olive oil. Add some frozen peas to the pasta pan a few minutes before the spaghetti is done then just toss the spaghetti and peas in all the chorizo and garlic oil. Takes 10 minutes.

Our usual can't be arsed meals are:

Jackets with beans/cheese and/or cheese, carrot, mayo salad with any chopped up salad veg on the side (baby tomatoes, peppers, carrot sticks, bagged salad) or pickled eggs, if we have them - it's less cooking and more just assembling

Fried or dippy eggs with toast, sometimes beans or bacon, if we have it

Cheese quesadillas or taquitos (rolled up wraps with cheese in the middle, baked in oven for less than 5 minutes) with creme fraiche/soured cream and salad - we had this last night actually

Cacio e pepe - spaghetti with butter, pepper, garlic granules, parmesan or other grated cheese with garlic bread or salad
