Would you cook and eat mince with use by date of yesterday?

As long as looked OK , had been kept in the fridge and didn't smell, then yes.

As long as you cook it thoroughly it will be absolutely fine (as long as it has been stored correctly up 'til now)

If it's still red or pink - yes. If brown and smelling vinegary - no.

I'll use meat two days out of date without worrying. If it's three days over then I'll keep sniffing it during cooking and make sure I have a back up of a 5 minute stir fry just in case.

Pork or poultry no

Lamb depends on how it looks/smells

Yes, of course. It doesn't go off at the stroke of midnight but it does make a difference how you have stored it. The thing with meat is that you can usually tell if it's off. Just sniff it.

If you had bought it from a butchers shop and kept in fridge for a couple of days you'd use it wouldn't you? beef mince will be fine.

I wouldn't hesitate.
I get my meat from the local butcher so no use by dates and if it looks fine (I've had nasal problems so absolutely no sense of smell) then in my extra large tummy it goes 🤣

Have done this with beef including mince plenty of times, always fine. Would never with poultry, pork or fish though.

Yep with no problems unless it wiffed when I opened the pack.

It makes me wonder how people nowadays would of survived 10/15 ish years ago when display until / eat by / use by / best before were not a thing . ( or at least not as common )
And fridges were no where near as efficient.
