Do you still use a pan filled with oil to fry chips?

Or maybe you've got one of those deep fat fryers that would sit on the side filled with rancid old oil (although I'm remembering my grandmas here and maybe they wasn't the norm with them!)

Anyway, with the rise in popularity of air fryers I wondered if anyone still did stuff the 'old fashioned' way?

I've never cooked chips in anything other than the oven or an airfryer

No, because I detest chips and dint see the point of them. I airfry frozen chips for the fam, but I simply don't understand the appeal compared to roasties, mash or a jacket potato.

I deep fry bhajias, Scotch eggs, samosas and courgettes in a pot full of oil though

We had a chip pan in the 70's. Let the lard go cold after we fried chips. Peeled, chopped and cooked.

i don't and have an airfryer which makes OK chips. But nothing like the chips my Mum made in an old fashioned chip pan with melted lard which was only replaced when it was truly rancid. Best chips ever!!

I have an electric deep fat fryer and it never contains old or rancid oil. It’s emptied after every use which is about once a week.

I also have an air fryer.

Then there’s my old fashioned chip pan that I still use to make homemade chips in every couple of weeks. It’s also emptied and cleaned after each use.

My mother used a chip pan but never lard. She used vegetable oil that went solid and white when cold.

Never done it that way.
My parents had a deep fryer but DH and I just do homemade oven chips.
I occasionally miss a fried chip but not enough to bother messing about with large amounts of oil to make them. I'd likely burn myself.

Ah the old chip pan full of lard I remember it fondly. The pan itself was burned black but the chips my DM produced were heavenly. I used to love tinned corned beef sliced, new potato chips and some lettuce and tomato from Dad’s allotment with Heinz salad cream.

Thats what a fabulous meal is all about. It wouldn’t touch my sides on the way down.

I have only ever had chips from a chip pan once in my life, and they were absolutely bloody gorgeous.

I have a deep fat fryer and the chips from that are delicious, but it was last used about 2 years ago. Too much hassle in replacing the oil.

Use an airfryer every day and the chips are good, much better than from the oven, but not as tasty as deep fried or from the chip pan. And I know an airfryer is technically just a small oven but they definitely taste better than oven chips!!

Why are they greasy? What a shame-doesn't she have the oil hot enough?

It must be boiling as on her stove, but greasy compared to oven chips. She does not put them onto the kitchen roll to blot off any oil before putting them on a plate either.

What do people do with the Oil? I just imagine frying in either a fryer or on the hob then just having a mass of oil

Keep it in the pan, then reuse it a couple more times if I'm frying anything else (eggs,sausages,chicken schnitzels ) then throw it away.

No, absolutely not Shock

I was of an impressionable age in the 90s when those terrifying PSAs about chip pans burning people's faces off/entire house melting in a fireball were played constantly and subsequently, I have a huge fear about deep frying, no matter the method. I have this perception that it's incredibly dangerous and easy to set on fire.

It was only a few years ago that I realised they were mainly referring to dangers of chip pans on the hob, I'd never seen anyone use one and thought it was relevant to electric deep fat fryers as well. (I didn't even realise they were called "safety fryers" in the 80s!) But even though I now know that isn't the case, I still don't want one because of the smell and the difficulty in dealing with the used oil.

What do people do with the Oil?

Drain it, filter it, and store it for reuse.

What it's put back in the bottle to use to say fry some onions in a frying pan? Sorry never had a fryer myself and just thought it would be an issue getting rid of the oil, like it doesn't seem easy to dispose of when it needs changing

I know it sounds stupid by the way and it's not necessarily a health thing because I'm unfortunately unhealthy. It's just a combination of not knowing oil disposal, scared of fires and a little about health as I feel like once I started I'd be frying up all sorts

I have both, a deep fat fryer, oil changed regularly, and an air fryer, which is used more often. Certain foods taste better deep fried, especially Fish, and kids like chicken nuggets and chips deep fried, they say it tastes like the chippy, so saves me a fortune. Tend to use the deep fryer maybe once or twice every couple of weeks, but use the airfryer almost daily.

My Grandma had a chip pan, set fire to her house frying an egg in it as she didn't turn the electric hob off afterwards and it exploded. She was fine and blamed the firemen for using dirty water (they used foam 😂) for the entire house needing refurbishment. Can laugh about it now 25 years later!

My mil 80 has a old style hob chip pan which has a mix of lard and beef dripping
It sets hard between uses but the chips taste amazing! She changes the fat once it starts to look dirty. She also has an air fryer but won't do chips in it.

You can't beat chip pan chips for taste, but our chip pan went a long time ago, we don't have space for one. So either oven chips or chip shop for us.

I very occasionally have the notion for some fried thick potato skins and shallow fry them in a pot with about an inch of oil and a slotted spoon, then eat with mayo and sweet chilli sauce. But havent made real chips for years.
