Ham joint put over night

Just cooked ham joint for tomorrow in slow cooker. Can I leave it cover in kitchen over night to cool as it's still too warm to put in fridge?

I’d stick it in the fridge now. Wouldn’t risk leaving it unrefrigerated over night. I only want to gift chocolate and not food poisoning

But you can't put it in the fridge warm either!!! Could you slice it so it cools quicker, then fridge it?

Yes, we always do this and we've never been poisoned (yet)!

It needs to go in the fridge within 90 minutes of being cooked.
It should be cooled down enough by then.

Why would you get food poisoning from a cooked product? Cover it with foil and leave to cool naturally. If you put warm food in the fridge you're more likely to raise the temperature and cause the deterioration of foods you would otherwise consider fine.

In similar situations I put stuff in the garage as it's colder in there.
But it's fine to leave it out overnight. Safer than putting it in a closed box (the fridge) and warming up everything in the box.

Okay - it has to refrigerated within one to two hours. It's been updated since I did my certification in food hygiene. Smile

Unless your kitchen is heated overnight, I’d certainly leave it out and often have done. Of course it will depend on the size, but a joint will take a long time to cool down enough to put in the fridge. TBH I wouldn’t even think twice, and gammon is a favourite in this house.

Why would you take any risk when it can just be put in a fridge? Genuine question.
