Turning a vanilla sponge cake into a white chocolate one - what do I sub out?

I want to attempt to turn a standard vanilla sponge into a white chocolate one by subbing in some melted white chocolate. Could I ask the experienced bakers - would this replace an egg? Some butter? Or a bit of both? Thank you!

White chocolate is mostly cocoa butter, other fats, and sugar. So remove some butter and some sugar and it should work.

I’d try a web search for a recipe
off the top,of my head you can’t just substitute chocolate for anything.
id make a white choc ganache to fill and top an ordinary vanilla sponge, if I really wanted a white choc cake

It’s very hard to get a strong taste of white chocolate in a cake, would you consider making white chocolate icing for it instead?

I have tried to Google some, I have found a lot of recipes but... I know my vanilla recipe works well, and I have limited time. So ideally I thought I'd just adapt my vanilla one!

Definitely going to try it in some icing, I just thought it might be fun to try to add a bit in the sponge too! Smile

I wouldn’t try. White chocolate isn’t really chocolate as such. I’d keep sponge plain and add white chocolate as an icing or filling.

When I do a white chocolate and raspberry cake I just add white choc chunks and raspberries to the batter - seems to come out ok!

How about making the vanilla cake recipe if you know its reliably foolproof and add chopped white chocolate to the mixture, then top with white choc ganache. I think too many things could go wrong if you start messing about with a recipe. I've just had a quick Google and there are some recipes that include melted white choc, you'd probably be better following one of those than guessing amounts.

You can’t really. I’d make it vanilla but add white chocolate chunks, then make the buttercream with some white chocolate in.

You can make a standard sponge into a chocolate one quite easily. Use plain flour and 1 tsp of baking powder for each egg. Same weight of chocolate, butter, flour, sugar and egg. Helps to separate eggs, and add a half-shell of milk to replace liquid egg white. Whisk the whites until stiff and fold in. Add the melted chocolate after you've mixed butter and sugar.

Disclaimer have done with plain choc, but see no reason why it shouldn't work with white, or milk.

Buy white chocolate chip cooking chocolate and mix them into the regular vanilla cake mix. Then use white cooking chocolate as icing. (I regularly do this with fairy cakes and people love them).

Yes, but you did it with plain chocolate. It makes a big difference. White chocolate isn’t actually chocolate.

Ok, so I have substituted 20% of butter and 20% of the sugar with the same weight of melted white chocolate. It’s in the oven so I’ll update!

White chocolate cakes tend to be a lot heavier than standard cakes, so don’t be surprised if it’s a bit flat and as others have said I wouldn’t expect much flavour from jsut adding some white chocolate without switching to. A heavier cake that can take a lot more chocolate.
