DH usually makes Sunday dinner but he has gone out for the day, leaving me with a set of handwritten instructions on how to roast a pork shoulder joint. Not because I can't cook, but because he has a particular recipe he likes to use. It's a 1.75 kg joint and the instructions on the pack say to roast it for 2 hours and 20 minutes, His instructions, however, say to cook it for four and a half hours - at 200C for 30 minutes then at 150C for 4 hours. Surely that's too long a cooking time?
