Tips and recipes to eat more veg?

I would love to increase my veg intake. I'm not a huge fan of fruit and don't snack much but our main meals are currently lots of convenience foods due to work. It would be fab if I could make some veggie side dishes or even main meals but i don't want to make veggie dishes of stuff we already eat (like chili/lasagne) because it will just be compared to the meat version and unliked! Any recipes that are high in veg and a bit different? Like shashuska for example...

Lots of different veg sliced or chopped in a stir fry - cooked for a few minutes only. You don’t need expensive imported mini sweetcorn etc - carrots, celery, mushrooms, peppers, white cabbage, etc., are fine.
A little stir fry oil and a sauce made of 2 tbsps each of oyster sauce and water, one of soy sauce. Makes a nice side dish with all sorts.

Make the veg the focus of the side dishes not the carbs, so do a small amount or none of eg potato and roast a load of veg to have on the side of meals.

I’m not a vegan but have a great cookbook called Easy Vegan. Lots of great ideas for recipes that are standalone or work well as sides, eg Arabian Lentil salad (tinned lentils, celery, dates, fried onion and garlic, spices). Hardly any meat / dairy substitutes either .

Why would a veggie version be unliked?

you could reduce the amount of meat and increase veg/ pulses like lentils

Soups, smoothies, salads and stir fries... I once read that you should aim to eat about 30 different fruit and veg a week for optimum gut health. A little unrealistic admittedly, but I made a list of all the fruit and veg I 'enjoyed' eating and work off that when meal planning. (I reckon I eat about 15-20 different ones every week as a result).

It’s 30 different plants so not just fruit and vegetables but also grains, seeds, nuts, pulses, herbs.
