My weight has ballooned and I don't know where it all went wrong

So, I've always been on a diet. Even as a child I remember always feeling self conscious of myself however I was never a big chubby child, I was tall, skinny legs but always had a little tummy, but nothing outrageous at all. I've always grown up a bit conscious of my weight but looking back on photos I was always thin, always looked great and clothes just fitted me lovely

Roll on lockdown and me being late 30s - I have put on about 3 stone. I have no idea why or how but I'm sooo self conscious of it. Nothing fits me, I look so through other and scruffy anytime I see myself in photos as clothes just don't fit me properly ( I'm
All belly and have developed a double chin and thick neck) I just don't know what to do. I've tried lots of methods but the weight is so stubborn anytime I tried to lose weight on the past, I'd really notice after a few weeks of trying. I did slimming world about Aug time last year for months and only lost a few lb despite sticking 100% and walking lots. My friends did it too and lost lots of weight while not even trying ( I witnessed the snacking and the wine that they didn't count as syns)

What is wrong with me ☹️

Simple things to try that I do .. I have autoimmune thyroid disease so it isn't easy to keep my weight down and I'm nearly 50.

I drink 2 litres of water a day ( I have a big bottle and fill it up so I know what I'm drinking )

I'm black coffee in the morning and fast until lunchtime

We get hello fresh so it's healthy balanced meals and don't over eat ( it's not as expensive as everyone thinks )

I don't have cheat days but also eat a bit of what I want

I eat at least 3 bananas a day and lots of citrus fruit but I'm mindful of my total calories load for the day

I walk at least 10,000 steps a day

I don't drink alcohol or fizzy drinks .. only water or squash sometimes or lemonade

I don't eat meat or dairy

2/3 of my plate is veg or salad

You obvs don't have to do all of these but this is what I do because I want to stay well and live a long time

My advice is going to contradict the others slightly.

I'm 48 and lost weight by doing low carb. Not strict keto because the amount of fat I would have to consume is unmanageable.for me but I cut out bread, potatoes, pasta, rice, fruit and some vegetables. People assume that if you do low carb, it's just another form of low calorie diet but that's not the case if you do it properly because you replace carbs with fat and get your energy from that.

My diet is mostly green veg, cauliflower and swede, fatty cuts of meat (eg pork belly, lamb, chicken thighs) and fish (eg salmon), eggs, butter, olive oil, small amounts of berries, so much cheese and double cream. I occasionally eat berries but I've essentially cut out fruit due to the sugar content. I avoid vegetable, sunflower and other industrialised oils. I don't eat snacks unless you count home made pork scratchings and I make things like mayonnaise so that I avoid all the hidden nasties that are so often added to food.

My diet is fairly 'clean' and my shopping list comprises of 'ingredients' rather than food I can just open and eat.

I used to count calories and aim for 1200-1300 a day to lose weight. My intake is around 1600-1700 calories a day now.

I look younger, I'm never bloated, I never get skin redness, I have more energy and sleep better. And have lost a couple of stone in weight.

Reading. I don't think I eat any more or drink much more than I did before, but clearly that's not true!
