I have a few but though I do say so myself, I make a mean cottage pie. Always add baked beans & curry powder & top with yummy cheesy mash. Hits the spot!

Creamy truffle mushroom linguini
Pea and leek risotto
Roasted vegetable tray bake with halloumi

CurlewKate · 09/03/2023 11:31

Chickpea curry.
Seafood pasta with Aldi frozen assorted seafood.
Fish finger sandwiches.

Chicken and chorizo casserole
key lime pie
i am amazing at lasagna and cottage pie although I fully reject the beans and curry powder concept- I’m a purist- sorry! 🤣. The key is celery.

Basically I get all my recipes from BBC Good Food as they always work.

Risotto - chicken and pea or chicken and chorizo.
MLD rice (basically homemade egg fried rice with any left over meat/veg)
Chocolate brownies - I make the best ever brownies.
Lemon drizzle cake
Lazy chicken stew, star anise is AMAZING in this.
Lazy cheek and licken casserole.

Cheesy pasta.
Sometimes it's just cheddar in a roux sauce which goes straight over pasta. Sometimes it's the full three different cheeses, marmite or mustard and crisps on top and in the oven for half an hour.

For guests when I don’t want to be in the kitchen until it’s time to serve up, either this lamb recipe: cookingbythebook.com/recipes/23364/
Or this oxtail recipe: www.pressurecookrecipes.com/instant-pot-oxtail/

Never had anything but rave reviews.

@JustFrustrated , How do you tell when the brownies are baked? Whenever I make them, I’m not sure if they’re squidgy or just not cooked properly. Would love a good recipe

My go-tos are pasta bakes, cod with a Parmesan parsley crust, chocolate mousse

When they're pulling away from the greeseproof paper and lightly cracked on top, I give it 3 mins from them then leave them to cool in the pan. The heat keeps cooking them.

When I want something comforting this is my go to www.theguardian.com/lifeandstyle/2009/jan/10/hugh-fearnley-whittingstall-recipes-stew

When I want something lighter I always do salad (shredded lettuce, red cabbage, carrot, sweetcorn and mayo) with honey marinaded chicken thighs and flatbread. Delicious!
