It can be read as a question - is it the man or the company who are buying them?? Context is your friend her OP.

The man and the company - which are buying the oranges?

The man and the company - who is buying the oranges?

As in which party. But if that's not it and it's saying that both of them are buying the oranges then it's who.

I think it’s who, but it’s been drafted as which in the document I’m reading.

That's definitely grammatically correct, but @sleepwhenidie you need to tell us the end of the sentence in order to ascertain if commas are needed or not (ie is the clause about buying oranges non-defining or defining)

I think it’s too wordy, ‘Both the man and the company are buying oranges ….. ‘ or ‘The man and the company are each buying their own oranges ….’
