Smoked Salmon and Cancer Risk

I love eating processed meats, cold cuts etc., but have been avoiding these foods as they are known to increase certain cancers.

I still eat smoked salmon though. The ingredients are simply salmon and salt. No nitrites, no mention of any smoking agents.

So is smoked salmon still in the same cancer-causing category? By the way, I am aware that smoked salmon may cause a listeria poisoning and that it's rather high in salt. I am more concerned about cancer.

I would think the fish being smoked would absorb some of the smoke in the process, but I am really not an expert in this.

The research IS connected to nitrites, but I have read that the smoking process itself can produce nitrites as a by-product.

Anyway, all this is getting a bit too complex now😆. I think moderation and ,as a pp has mentioned, variety is the key.

I will definitely try gravlax. It sounds delicious!

yes to the fact that the smoking process produces nitrites other chemicals that are fully absorbed into the flesh and "preserve it".
so yes although not an ingredient, it is part and parcel of the fish and should be eaten in moderation.

Its probably more dangerous to walk down the high street and breathe in traffic fumes. A balanced diet is the best way to go, eat whatever you like in moderation.
