Easy but impressive brunch recipe / spread

Hi! I’m hosting brunch tomorrow for five people in total (me included). I have a small kitchen and I’m time poor/don’t want to make a huge mess and use all my dishes. Please share your recipes or ideas for an impressive brunch! Will do mimosa cocktails and tea/coffee obvs. Looking to impress with minimum effort 😅 no dietary restrictions

Can you get to the shops.today - the frozen, bake in the oven croissants and chocolat au pain are lovely, I’m sure other supermarkets do the same. A platter of chopped fruit and a bowl of natural yoghurt. Smoked salmon or hot smoked salmon. A cheeseboard with three or four different types. A green salad. Something with eggs and warm - maybe a quiche ? Or a Spanish Omelette. Fresh scones, good butter and jam. A basket of fresh breads.

Obviously you could go to more effort than this but it is minimal effort apart from quiche/Spanish omelette and scones.

My go to is a Skandi / Jewish deli style spread/platter & let everyone put together their own plate:

Hard boiled eggs, smoked salmon, capers, dill, cream cheese, lemon wedges, creme fraiche (with lots of chopped herbs), sliced red onion, rocket etc.
A mix of breads like ryvita or similar, bagels, Toasted Sourdough etc

Go for an Indian vibe? look up Dishoom breakfast. Naan bread chilli jam cream cheese and bacon

I'd go for frozen pastries, just pop in the oven om a baking tray and some american style fluffy pancakes (www.thesweetestmenu.com) has a great recipe. You can make those in advance and warm through in the oven. Then a bowl of fruits - strawberries, raspberries, blueberries - and some plain yoghurt, maple syrup and honey available. If you wanted to go with more some fruit skewers also pair with the yoghurt and are easy - melon, pineapple, strawberry, grapes.

Kedgeree, something a bit different from the usual smoked salmon/scrambled eggs. Simple to make, and not as time critical as scrambled eggs when serving to a group.

Another idea is Parma ham, (or other Italian charcuterie) fresh figs, melon slices, with rocket walnut and fennel salad.

Or: Churros with chocolate sauce for dipping, followed by Spanish omelette.

Or best of all... Warm Belgian waffles with fresh cream, jam and sprinkles, followed by chicken salad sandwiches.

Pre make refried beans and tomato salsa (easy and cheap). Layer in oven with cheese, nachos, guac or avocado, sour cream, jalapenos.

Shakshuka could be another option. Make the sauce today so all you need to do tomorrow is heat through and add the eggs. Serve with plenty of warm bread.

Another vote for shakshuka. It's a perfect brunch dish for me and prevents having to have loads of different plates of different things. Plus you have the advantage of being able to make the base in advance and then just add the eggs.
Serve simply with some fresh bread and maybe a fresh fruit platter with Greek yoghurt for those fancying a sweet option to finish off.
