Batch cooking ideas

Every 6 weeks I batch cook a veggie chilli and a veggie spag bol. I feel the need to mix it up a bit now so after some ideas of what I can try next? Each evening meal is cooked from scratch but not really great for batch cooking; Risotto, stir fry etc.

I tend to make big batches in the slow cooker and freeze leftovers - but I’m only cooking for two.

Veggie shepherds pie? Lasagna? I make a 4 cheese and spinach one that freezes well, can look use mushrooms except dp won't eat them, bah.

Soup is always good for batch freezing. Make a load, pour into tie sandwich bags sat in tupperware, freeze, the remove the tupperware and you have easy stackable blocks of soup.

I have the same batch cooking rut as you! Too much chilli and Bolognese. Other things I try to keep on hand are veggie tagine, mutter paneer and veggie gumbo (you can use frozen okra for this). The other thing that helps is using chilli and Bolognese as the base for lots of other meals - veggie lasagna, enchiladas, tacos etc.

It's a waitrose one, sorry, haven't figured out to do links. However its also great as it taught me to do became without making a roux so go for it. Ricotta, mozzarella, gorgonzola and parmesan, it's lovely

I often just freeze a "base" made from finly minced onions, celery and carrots (can also add garlic & herbs) which are fried with some tomato puree and vegetable stock.

I then use this for making curry's, stews, casseroles and (yep) chilli & co. It also makes a great addition to burgers!
