Veganuary 2023 - inspire me!

Is anyone else doing this?

Please share your favourite vegan meal ideas!

Some of mine from last year:
Cashew Mac and cheese
Pumpkin pasta (instant pot)
Avocado hummus and chilli jam sarnies
Black bean brownies

Oh and for eating out- Wagamama wins hands down, ramen, ribs, mushroom bao buns, katsu curry.. they have ALL the things!

I might do more of a 90/10 approach this year as I've got a family fondue night in the middle of the month.

Looking forward to finding some new recipes!

I can give you four ideas, as we started a day early!

So far we've had this mushroom and black-eyed bean curry from Chetna's 30-minute Indian: www.theguardian.com/food/2021/sep/24/chetna-makan-easy-curry-recipes-yoghurt-chicken-fish-lentil-cauliflower-pea-mushroom - we used a mix of portobello and dried porcini mushrooms instead of chestnut, and served it with basmati rice - really beautiful.

Also an improvised very hot chickpea curry (sorry for imprecise quantities below, I am a bit of a slapdash cook!):

  • Cook down a lot of finely sliced onion.
  • Blitz 4 garlic cloves, 2 chillies (we used scorpion ones, as we grow them and my OH is a heat fiend, but choose to suit your favourite level of heat), biggish piece of (peeled) ginger, and a load of sundried tomatoes with some of their oil to form a paste.
  • Add the paste to the onions and cook for a few mins, adding a teaspoon each of chilli powder, hot curry powder, and garam masala, and half a teaspoon of turmeric.
  • Chuck in 4 or 5 big tomatoes - ours were frozen earlier in the year from the allotment, and they broke down easily after a quick blast in the microwave, so I added them whole and smooshed them in the pan - if yours are fresh, you will want to chop them up before adding.
  • stick a lid on the pan and let everything simmer and break down for 10 mins until you have a nice thick sauce.
  • add the chickpeas and simmer for another 25-30 mins, checking occasionally to make sure it's not catching on the bottom of the pan (add a bit of water if needed)
  • Big squeeze of lemon juice stirred through in the last 5 mins
  • serve with basmati rice and flatbread (or whatever you like!)

And last night we had blue pumpkin (another allotment success this year) that we'd sliced and roasted with soy sauce and miso, served with celeriac mash and green veg - bit of a mish-mash of textures, but very tasty!

Tonight we're making soup with the rest of the pumpkin, cooked and blended with a roasted onion and lots of roasted garlic.

I'd love to hear any other ideas we could try :-)

Im Veggie rather than vegan these days but still eat a lot of vegan meals.
Favourites were
Penang curry with tofu (the recipe on the cauldron website is great)
sausage stew with olive oil mash
Tuscan bean stew with crusty bread
West african peanut stew
Coconut dahl and naan
Falafel wraps with hummus, pickled cabbage and chilli sauce
We used to make these loaded wedges which were spiced wedges, topped with fajita veggies and guac.

I get a lot of vegan meal ideas from Alexandra Andersson (Swedish living in southern Spain lucky thing) on her YouTube channel. She has a free plant based meal plan available atm.

We are not vegan but eat quite a bit of vegan/veggie meals for health really.

Lentil and butternut curry. I've got a slimming world recipe for one that I love. It's a big family favourite (son is allergic to milk so very often eat vegan or dairy free as a family)

The peanut stew and Penang sound right up my street, will definitely have to try those!

Sounds lovely - I love butternut! I'm the same as my friend can't eat dairy so the dairy free part is more common for me - it's the protein substitutes I need to get better at. I'd like to do it once a week eventually, and find some good recipes to rival regular versions so my partner will get involved!

Yes I do Veganuary every year! It forces me to be creative, make a lot of soups and discover new recipes.

Highlights so far this year have been a vegan Galette des Rois and I just made cinnamon buns for me and the kids with the leftover puff pastry which were very easy and went down exceptionally well! (Just mixed vegan butter, brown sugar and cinnamon, spread it on the pastry, rolled it up, cut it and baked.)

Any ideas for vegan packed lunches? I usually take in leftovers but sometimes don’t have access to a microwave. Last week I had a falafel wrap with oat yoghurt tzatziki but would be nice to mix it up. I’m not a massive fan of hummus.

For burns night I always make vegan haggis from this recipe and it’s delicious:

Been a veggie for a long time but my son just found this.
Seitan..( pronounced Satan 😂😂😂😂).

It’s amazing…plus you get to chew something which is very lacking on a vegan diet. I spent 40 years with nothing to chew.

75% protein if you make it yourself
Throw on top of a stir fry, put in wraps

Its amazing.

I'm a curry and stir fry sort of vegan, but sometimes I'll also have:

A soup dinner - two different, hearty homemade soups with homemade bread. People help themselves.

Baked potatoes with beans, vegan cheese, salad.

"Breakfast" dinner: Richmond vegan sausages, fried mushrooms and tomatoes, hash brown, toast + whatever else.

Homemade pizza. I make the base and tomato sauce, everyone tops their own pizza with whatever they want: onions, peppers, garlic, mushrooms, chillies, olives and Applewood smoked vegan cheese for me.

I forgot: savoury pancakes. I've made my own pancakes with either aqua faba or tofu and not been impressed, but can get vegan pancake mix for cheap in Asda. Have with chilli, and guac, salad, creamy mushroom sauce etc.
