Recipes with veg your kids will eat?

I’m wanting to get the kids eating more veg! Would love to know some recipes your kids love (that adults like too!) that I can start adding to our repertoire. Feel like the kids are in a pasta rut and we end up eating separately which isn’t cost effective!
We don’t eat red meat but other than that I’m happy to give anything a try.

oooh watching with interest. I have a 12 year old with sensory issues and autism and eating veg is a challenge.

he does like raw veg though. So I very often about 5 pm make him a little plate of raw veg sticks and say 'I am still going on dinner so start on that and I will finish up and serve'.

Works a treat.

I do puree vegetables into sauces though- (mac and cheese usually has cauliflower pureed in it). but half the time he realises.

Oh!- and this actually did not work for us but it did with one of my nephews.... when my sister went out to a restaurant she ordered tempura battered vegetables (aubergine, broccoli etc). It worked as a gateway to him liking vegetables.

DD eats broccoli but only when there is gravy involved.

I second the raw veg, mushrooms are only good when uncooked.

I used to grate carrot into spaghetti Bol.

I also did the chopped raw carrots/cucumber/red pepper/tomatoes/apples “while they’re waiting for dinner”.

Sofritto - easy way to add a fair amount of veg into pasta sauce, chilli etc. make it by chopping carrots, onion, celery very small or buy it ready chopped/frozen from larger supermarkets.

Soup - any veg, blend. There are some cheap soup makers that do it all for you or use a stick blender.

Fajitas - onion, courgette, pepper, mushrooms, asparagus or broccoli all stir fried with soy sauce then the kids can stuff into mini wraps or mini pittas. With some chicken cut up into strips or shredded, if meat eaters.

I make vegetable sausage rolls or pasties
Fry up small pieces of swede,carrots onions leeks broccoli cabbage - basically anything you've got then mix in some dry stuffing mix , I use sage and onion add a dash of hot water to bind it and chuck it in some puff pasty , egg wash add bake
You can double batch and freeze the veg
I serve it with gravy and chips

Is he able to help cook? On the sensory issues, I had more confidence in eating it if I had made it. Obviously some stuff I just won’t touch. I found mashed or puréed best, stir fry or steamed as this tends to be softer.

I put carrots, onions, courgettes, red peppers, garlic kidney beans, baked beans, mushrooms all in Spaghetti bolognese, you could make it with quorn mince if you don't eat red meat.

I do the same with vegetable curry/korma.
We eat it as it is, for fussy 12 Yr old dd I run it briskly through the blender just to iron out the texture
She would eat it every day if allowed. She would fish out all the bits she disliked if not.

My 2 DC eat most veg in bog standard meals. They're not at all keen on stuff with veg in it (casseroles etc) but will eat carrots, brocolli, peas, cauliflower, green beans with meals. Especially if gravy is involved. No chance of eating courgette, peppers, mushrooms etc.

Egg fried rice has always been a winner here- you can use lots of kid friendly veg like peas and sweetcorn and chop the less well liked things (courgette here!) more finely so they don't notice it .

Blanch spinach and blitz it with an avocado and soft cheese to make a green pasta sauce

Stir fried chicken and noodles with mixed peppers, carrots and courgettes (all julienne) and a tasty sauce.

My two go to meals for lots of veg are fried rice and fritters. Fried rice just throw any chopped veg in and season with soy/chilli/ lime to taste. Picking veg out of rice is too much effort and its so well flavoured it just gets eaten.
Fritters generally are Sweetcorn plus other veg grayed into the batter. Courgette works well as does carrot. Jamie Oliver has tomato fritters in his new book and they are good too. Top with a poached egg 😋
If they like spicy food I get away with a fair bit in a curry - baby corn, green beans and mange tout are all good in Thai curries and Spinach and sweet potatoes work in Indian.

Peel courgette before use in soup. That way the soup isn't green.
