I have a question for the expert bakers among you!

Hosting my in-laws this year for the first time, I’m making a layered lime cheesecake for pudding, so lime cheesecake with a layer of lime jelly on top. Looks simple enough to make but suitably impressive. I asked MIL weeks ago if she had a cake tin with a springy side i could borrow to which she replied yes. She brought the tin down to the house for me yesterday and said she couldn’t find the springy one so has just bought a normal loose bottom tin for me.

My question is, will the jelly layer stick to the side of a normal tin? I could buy a springy one locally but could do without the extra expense if I don’t absolutely need to spend it. Thank you!

Can you line it with a ring of greaseproof paper, that you peel off after you’ve got the cheesecake out of the tin?

Yes it probably will but you can run a sharp knife carefully round the outside of your cheesecake before you take it out of the tin (dip it in some hot water first) and it will come away. Alternatively, assuming it’s not a baked cheesecake you could carefully line the tin with clingfilm or parchment.

I'd put a circle of greaseproof or baking paper in the bottom then a strip of the same stuff around the inside of the tin.

You could also grease the sides with vegetable oil, the jelly won't stick to that.

I’m not sure it’s easy to get a biscuit base out of a tin without it breaking even with grease proof.

Should be fine if you fully line it with a ring of greaseproof.

Don't try to take it off the base though, you risk it disintegrating. (I use a glass based one for that reason so I don't damage it with knives)

If it's loose bottomed I wouldn't do the strips of paper - you can just put the tin on an
upturned bowl and push the tin downwards.

I would usually line the base with greaseproof, but I find the cheesecake itself always sticks to the sides anyway - I can't imagine jelly will stick more than cheesecake so I think I would just run a palette knife round it when it was set before I got it out.
