Grin I have a need for lemon drizzle cake but I can't for the life of me find my loaf tin. Does it really matter what you cook it in? Will a glass pyrex do? There's only me eating it so it doesn't matter what it looks like Xmas Grin

Yes, I cook in Pyrex all the time. Watch the timing, stuff sometimes cooks a bit faster in glass.

Yes, absolutely. I’ve done a ladybird Madeira in a bowl.

Yes, I've cooked a sponge in a glass Pyrex dish. I kept an eye on the cooking of it as it was quite deep compared to a tin - I think I had the oven on lower and in for longer with foil over the top to stop it burning.

pyrex is ok.
stainless steel mixing bowls make grate semi globes.

but line it carefully or it mught not come out.

I might need a straw for this cake.... It's been in just over half an hour and the outside is slightly over-done and the inside is liquid.. 🙄😬

In my limited experience it can be done, but it does cook differently because it takes longer for the heat to penetrate the denser dish. Cook lower for longer so it gets cooked into the middle.

sounds as if your oven was a bit too hot.

Cover edges with foil for a bit?

BaronessBomburst · 18/12/2022 15:22

Turn your oven down and cover the cake top with foil.

Is it in a pudding basin? You can wrap a damp tea towel around the bottom, like a nest, to stop the bottom part overcooking. When the towel dries out take it away. Don't let it catch fire!

WeepingSomnambulist · 18/12/2022 15:25

Of course you can! I make Tres Leches in the biggest rectangle glass dish I have.

Itisbetter · 18/12/2022 15:27

That’s seventies school sponge pudding your making…yum

You can do it in the microwave in about 10 minutes in Pyrex, it won't brown but fine if you are putting drizzle on ? If you need it to come out easily line the Pyrex with three layers of cling film.
